    <<28th October, 2025 – Hong Kong>> Following the resounding success of their first collaboration, Chef ArChan Chan (recently awarded of One Knife Award by The Best Chef Awards 2025) of Ho Lee Fook and Chef Jayson Tang of one MICHELIN-starred Man Ho Chinese Restaurant reunite this November for a one-night-only culinary encounter. Taking place on Wednesday, 13 November 2025, at Ho Lee Fook, this exclusive dinner marks the second collaboration between the two Cantonese chefs exploring into the world of Chinese delicacies: “The Four Treasures” 鮑參翅肚 (abalone, sea cucumber, fish maw, and vegetarian shark fin).

    A CONTEMPORARY TRIBUTE TO THE FOUR TREASURES OF CANTONESE CUISINE

    Along Hong Kong’s storied shores, the scent of the sea lingers. Once a humble fishing village, the city’s connection to the ocean runs deep, shaping its identity, cuisine, and generations of livelihoods.

    The dried seafood trade took root in the mid-1800s, when Hong Kong rose as a vital port linking China to the world. Merchant junks from Fujian and Guangdong brought prized catches to be dried, salted, and sold, turning preservation into a culinary craft that has endured for centuries. From this legacy came the “Four Treasures”, namely abalonesea cucumberfish maw, and shark fin, the jewels of Cantonese gastronomy. Each carries both mastery and meaning: abalone for prosperity, sea cucumber for resilience, fish maw for nourishment, and shark fin for refinement.

    Honouring this history, Chef ArChan and Chef Jayson join hands once again to reinterpret these ocean treasures, with deep respect for tradition and imaginative new thinking that transcends boundaries. Each dish in the eight-course menu celebrates the textures, symbolism, and craftsmanship of Cantonese delicacy culture through a contemporary lens.

    “This collaboration gives us the opportunity to revisit the Cantonese classics that have defined our journeys as chefs,” shares Chef ArChan Chan. “These ingredients are timeless – they speak to our roots and reflect how we continue to evolve.”
