<<17th August, 2026 – Hong Kong>> Following two sold-out collaboration dinners in Hong Kong earlier in May 2026, One MICHELIN-starred Duddell’s comes to Taipei this September for the second chapter of its Cantonese culinary exchange with the newly awarded One MICHELIN-starred Silks House at Regent Taipei. Taking place over two evenings only on 16 and 17 September 2026, and marking Duddell’s first collaboration in Taipei, the event sees Duddell’s Executive Chef Chan Yau Leung reunite with Wo Hoi Ming (Chef Max Wo), Regent Taipei’s Chinese Culinary Director, who leads the culinary team at Silks House, this time bringing the two chefs’ ongoing Cantonese culinary dialogue to Taiwan . The reciprocal collaboration follows the partnership first announced earlier this year, celebrating the shared traditions and evolving future of Cantonese cuisine across Hong Kong and Taiwan.
Since the Hong Kong collaboration, both restaurants have continued to receive international recognition. Silks House has been awarded One MICHELIN Star while also being ranked No. 64 on Asia’s 50 Best Restaurants 2026. Duddell’s, meanwhile, was recently named one of Tatler Best’s Top 20 Restaurants of Hong Kong, reinforcing its reputation as one of the city’s leading destinations for refined Cantonese dining.
Hosted within Regent Taipei, the exclusive dinners will showcase the signature styles of both kitchens through an elegant multi-course menu that reflects each chef’s interpretation of Cantonese gastronomy. Together, Chef Chan and Chef Wo continue an ongoing culinary dialogue built on mutual respect for tradition, exceptional ingredients and meticulous craftsmanship, while highlighting the distinct character that Hong Kong and Taiwan each bring to the cuisine.
A New Collaboration Menu Created for Taipei
Created especially for the Taipei collaboration, the nine-course menu brings together signature dishes from both Silks House and Duddell’s, reflecting the individual styles of the two kitchens and their shared approach to contemporary Cantonese cuisine.
Highlights from Silks House include Braised “Buddha Jumps Over the Wall” with Cordyceps Flower and Fish Maw and Braised Chicken Wings and Sea Cucumber in Sichuan Mapo Sauce, alongside Duddell’s signature Sautéed Prawn with Chicken Broth and Braised Whole Yoshihama 28 Heads Abalone. The menu also revisits Deep-fried Egg Custard with Chicken Testicles, a Cantonese classic first presented during the chefs’ Hong Kong collaboration in May, creating a culinary thread between the two chapters .
The evening concludes with desserts by Silks House, including Bird’s Nest Custard Pastry and Double-Boiled Hashima with Red Date and Longan.
The 9-course dinner is priced at NT$16,800 + 10% service charge per person, inclusive of five wine pairings curated to complement the menu. Guests who prefer not to drink may instead enjoy a thoughtfully crafted non-alcoholic pairing, offered at no additional charge.

Introducing Taiwan’s Silks House and Chef Max Wo
Silks House is led by Wo Hoi Ming (Chef Max Wo), Chinese Culinary Director of Regent Taipei and a veteran Cantonese chef with more than three decades of experience.
