Celebrating the culinary excellence of Yue (Cantonese) cuisine in China, “The Taste of Lingnan” is a unique collaboration that offers innovative interpretations of traditional dishes. Three talented chefs with origins in Guangzhou Province will showcase their signature seasonal dishes in a rare “6 hands dinner” event featuring Chef Li Chi Wai from The Legacy House, Chef Bill Feng representing Lingnan House and Chef Justin Tan from The House of Dynasties, as they continue to push the boundaries of traditional Cantonese culinary techniques.
Bill Feng, the Executive Sous Chef of Rosewood Guangzhou, is recognised as one of the most respected chefs in China. With a profound expertise in Cantonese cuisine, his culinary mastery has been recognised with numerous accolades including the prestigious one Michelin star and two Diamonds on Black Pearl Restaurant Guide. Additionally, he has achieved the esteemed title of Forbes China 30 Chef 2023. Chef Bill Feng espouses the philosophy that innovation is about enhancing traditions, not altering them, showcasing his commitment to evolving and elevating Cantonese culinary traditions with intuitive creativity.
Justin Tan, the distinguished Executive Chinese Chef of The House of Dynasties, has cultivated an illustrious culinary career rooted in his expertise in classic Chinese cuisines, particularly Cantonese. Hailing from Zhanjiang, Guangdong Province, Chef Tan brings over 30 years of culinary experience to his craft. Tan’s unwavering dedication to the highest quality is demonstrated through his passion for sourcing the finest natural ingredients and his innovative approach to traditional dishes. His culinary philosophy revolves around creating dishes that exude a simple yet striking aesthetic – a vision that accentuates the inherent beauty of simplicity and zen-like elegance in his elevated culinary artistry.
A special 6-course set lunch will be available at HK$980 + 10% per guest or an 8-course set dinner at HK$2380 + 10% per guest along with A La Carte menu from 21 to 23 March.
