• Rosewood Hong Kong collaborated with New York’s Eleven Madison Park for an exclusive dining experience with the finest local produce

    Channelling a shared passion for sustainability, Rosewood Hong Kong is joining forces with New York’s three-Michelin-starred plant-based restaurant, Eleven Madison Park, bringing a unique dining experience to the dedicated epicureans of Hong Kong. Led by culinary maverick, Chef Daniel Humm, the event will bring together two of the leading names in sustainable dining and responsible hospitality.

    The 8-course plant-based tasting dinner menu (priced at HK$3,988 + 10% per guest) takes inspiration from Eleven Madison Park’s signatures offerings and will star the finest hand-picked produce from local organic farms. Dishes will be accompanied by wine pairing options curated by Eleven Madison Park’s Wine Director, Gabriel Di Bella. This creative collaboration showcases the potentiality of plant-based dining and demonstrates that culinary prowess can go hand-in-hand with sustainability. It is an embodiment of the commitment by both Eleven Madison Park and Rosewood Hong Kong’s to move luxury hospitality forwards in a more sustainable direction.

    Creating positive impact is a guiding mission for both brands, and a determination to establish business practices that bolster local communities while being kinder to the planet has been a motivating force behind this collaboration. To further this mission, Chef Daniel Humm will be sharing his stellar culinary career, and his passion for sustainable living and plant-based recipes with students from the Hong Kong Vocational Council’s International Culinary Institute, a Rosewood Empowers partner.

    Eleven Madison Park’s residency at Rosewood Hong Kong comes as the city continues to reopen to the world, and also coincides with the iconic New York restaurant’s 25th anniversary. Throughout this impressive tenure, Eleven Madison Park has continued to evolve and push boundaries. In 2021, it adopted a locally sourced, plant-based approach, throwing down the gauntlet and challenging the world of haute cuisine to move in a more earth-friendly direction. This shift aligns with Rosewood Hong Kong’s business-with-purpose approach and its aim to create neighbourhood resilience through meaningful hiring practices and a culture of inclusion. Both brands are working towards a future for fine dining and luxury hospitality that is sustainably redefined and regenerative, rejecting traditional ideas that hospitality at this level can be rigid or unchanging.
