    Chef Manav expands LEELA’s à la carte menu to showcase dishes that trace India’s vast geography and culinary evolution with a touch of local influences from Hong Kong, from street snacks and temple fare to royal feasts and regional comfort food. Guests may elevate their experience with curated wine pairings or non-alcoholic Saicho sparkling tea.

    • Fish Cheek Rasam – a modern interpretation of Madurai’s 16th-century tamarind elixir, elevated with delicate fish cheek.
    • Shishranga Murg– “six-colour chicken,” a Mughal marvel layered with spices and hues of saffron and beetroot.
    • Kandhari Lamb Chop– inspired by the pomegranate-studded flavours of Afghanistan’s Kandahar region.
    • Aash-e-Bawardi– slow-cooked beef curry with lentil dumplings, a royal stew rich in Persian influence.
    • Thrissur Crab Curry– roasted coconut, tamarind, and black pepper unite in this Kerala classic.
