This season, Date by TATE unveils a series of new pastries and celebration cakes by Head Pastry Chef Graf Kwok.
Delicate pastry creations include Local Honey & Strawberry Tart (HK$106, Box of 2) created with a mix of enticingly sweet Japanese and Korean strawberries, lemon sponge, strawberry compote, local honey diplomate cream, and a vanilla tart shell. For those who wish to enjoy an elevated breakfast or afternoon tea at home, take away the Date Tasting Box (HK$160) featuring the perfect combination of 2 Sheung Wan chocolate brioche, 2 slices of lemon pound cake, and 2 Chinese almond financiers.
2-MICHELIN-starred TATE Dining Room’s ever-popular Fermented Tofu Butter + Brioche (HK$138) is also available to purchase exclusively at Date by TATE, including 8 Brioche cubes and 8 fermented tofu butter cubes. Light-as-air and baked daily, the new Madeleine Box (HK$108) is composed of 6 freshly baked madeleines made with Chinese almonds. Finally, spoil a loved one with Date by TATE’s aesthetic Pastry Gift Set (HK$535), delivered in a sustainable wooden box and wrapped with a special DATE scarf. The gift set includes 12 sesame rocher, 12 raspberry rocher, 6 sesame sable, 6 peanut sable, 3 red date chocolate financier, 3 Chinese almond financier, and 1 apple blossom verbena.
The seasonal and highly sought-after Date by TATE Celebration Cakes are an homage to Chef Vicky’s previous life as a designer, showcasing edible works of art with French techniques and Chinese influences. New cakes include Ode to Lotus Pond (HK$420/280g, HK$820/780g), a cake made to look like a peaceful lotus pond with fondant lily pads floating on top, created with pistachio financier sponge, crunchy almond & pistachio, sour plum soup gel, and pistachio mousse. The second cake is the sophisticated Ode to Ginkgo (HK$420/290g, HK$820/650g) made with Valrhona dark chocolate mousse, red date paste, Chinese almond chocolate sponge, crunchy Praline and chocolate glaze.
Current crowd-favorite Date by TATE cakes include Ode to Shan Shui (HK$380/260g, HK$780/590g) with marbled-top earl grey mousse and sponge, Osmanthus goji berry jelly, crunchy rice, tea sable, and white glaze; and the Fermented Tofu Cheesecake (HK$480/400g), made with a mix of premium cream cheeses such as Brillat-Savarin and fermented local tofu, baked to perfection with a traditional caramelized top.
Date by TATE’s acclaimed Celebration Cakes require a two-days advance reservation and are available from Tuesdays to Saturdays. Delivery is available from 2:15pm-6:45pm and self pick-up is available from 1:15pm-6:15pm.
