Hidden away in MARGO’s mezzanine level, Kyle & Bain is the latest whimsical speakeasy cocktail bar headed by Leading Nation’s Beverage Director John Nugent, his second cocktail bar in Hong Kong continuing the success of The Diplomat.
New Bar Manager Lee Morris began his journey of bartending at 22 whilst studying Music at University of Leeds. Following his passion in mixology, he moved to London where his talent was soon recognised by Ryan Chetiyawardana (aka Mr. Lyan) and became part of the opening team of the world-renowned Dandelyan, which was named World’s Best Cocktail bar 2017, and was ranked No.1 on 50 Best 2019.
After leaving Dandelyan, he refined his mixology skills at the Social Company by Jason Atherton and gained vast experiences by managing various Michelin-starred restaurant bars including the Berners Tavern, the Blind Pig at the Social Eating House (World’s Best Restaurant Bar 2014) and 7 Tales at Socharu.
He further advanced his career by taking up group wide beverage development roles at JKS Restaurants (Trishna, Gymkhana, Hoppers, Bao) and played a key role in the opening of Brigadiers. He then worked with Matt Whiley on a consultancy for The Frog by Adam Handling with advanced beverage preparations and Lab management before eventually joining Leading Nation as Bar Manager of Kyle & Bain.
Signature cocktails at KYLE & BAIN include the Spumoni (HK$140), a blend of Campari, Grappa, Szechuan pepper, white balsamic, and Grecian grapefruit soda; a proper American Martini by way of K&B Martini (HK$140), created with the exact ingredients of 60ml Plymouth gin, 10ml Mancino Secco, 10ml Dolin Blanc, 10ml filtered water, a teaspoon of cider vinegar, and a refreshing squeeze of Amalfi lemon; and Gimlet (HK$140), a cocktail made with Genever, Japanese Gin, Mastiha, Salad Cordial, Star Anise, and homemade “Truffled Lime”. The cocktail menu also features premium classics such as a Negroni and Manhattan, a rotating list of creative martinis, and an extensive spirits list including vodka, agave, sugarcane, world whiskeys, and brandy.
