Introducing Seasonal Chef’s Recommendations: Hairy Crab Specials
This season, guests at Duddell’s will be able to savour delectable renditions of hairy crab by Chef Yip. A total of 8 new Hairy Crab Dishes will be on offer including crowd-pleasers such as Xiaolongbao with Hairy Crab Coral (HK$98); classical hairy crab pairings such as Braised Noodles with Hairy Crab Roe (HK$188 per person), Seasonal Spring Sprouts with Hairy Crab Coral (HK$348) and Crispy Rice with Hairy Crab Coral (HK$208); and dishes that showcase Chef Li’s excellent technique, such as Pan-fried Scallop stuffed with Shrimp Paste with Hairy Crab Roe (HK$348 per person), Braised Rice Cake, Mushroom, Hairy Crab Coral (HK$348), and Pan-fried Grouper with Winter Melon and Hairy Crab Coral (HK$488 per person). 225g of Steamed Whole Hokkaido Hairy Crab (HK$738 per person) is also available for those who enjoy a more traditional experience of savouring hairy crab.
Introducing a New 6-Course Hairy Crab Tasting Menu
For the ultimate hairy crab experience, opt for the chef’s six-course degustation menu priced at HK$1,488+10% per person. Comprised of select seasonal dishes, the menu surprises and delights with courses such as Steamed Whole Hokkaido Hairy Crab (225g), Double-Boiled Chicken Soup with sea cucumber, ginkgo nuts and pepper, Pan-fried Scallop stuffed with shrimp paste and hairy crab roe, and Braised Noodles with hairy crab roe, among delectable dishes. Additional orders of steamed fresh Whole Hokkaido Hairy Crab is priced at +HK$636 per 225g piece, and may be requested upon ordering the hairy crab set menu.
According to Chinese traditional beliefs, crab is considered part of the “cold” category of foods, and must be balanced with “hot” elements such as Chinese rice wine and ginger. Guests may opt for a Yellow Wine Pairing for an additional HK$588+10% per person, inclusive of four flights.
