Opened in December 2023, Aulis Phuket is a Thai extension of Rogan’s chef’s table concept located at Iniala Beach House on Phuket’s northern coast, emphasizing seasonality and locality in its culinary philosophy. Led by Executive Chef Oli Marlow and Head Chef Charlie Wilson, the team showcases native flavours by collaborating with local farmers and utilizing ingredients from their small-holding farm. Signature dishes include Khonkaen wagyu tartare, Day boat orange spotted grouper with Thai chives, and Frozen Chiang Mai sheep’s yogurt. With nearly 90% of the tasting menu sourced locally, Chef Wilson brings his two-Michelin star expertise to the innovative and farm-to-table dining experience. Aulis first launched in Cartmel, UK, in 2016, and since then has expanded to Aulis London and Aulis Hong Kong.
Aulis Phuket winning the Michelin star now brings Simon Rogan’s total number of Michelin–starred restaurants globally to nine – comprising 3 stars at L’Enclume, 2 stars at ION Harbour in Malta, and 1 star each for Rogan & Co, Roganic Hong Kong, Aulis London and Aulis Phuket respectively. In addition, he also proudly possesses Michelin Green Stars at L’Enclume and Roganic Hong Kong. These achievements now qualify him in having the most Michelin–starred restaurants of any British chef in the world.
Earlier this week, L’Enclume, Rogan’s three-starred restaurant in Cartmel was listed as the number one restaurant by La Liste for the second year in a row – receiving a joint top score of 99.50. It was also announced that the United Kingdom has been awarded the Next Gastronomic Destination 2025. As the only British chef to have been awarded the number one ranking in La Liste’s nine-year history, it is something which Simon holds a huge sense of pride around.
