12-13 November: Louise x Odette Exclusive Collaboration Menu
The evening begins with a selection of grignotages, offering a playful introduction to the chefs’ culinary approach. Highlights include Oyster with green Tabasco and lychee, combining briny freshness with a lively touch of heat and sweetness; Takoyaki Beaufort with vin jaune voile, a creative interpretation of the Japanese favourite through French ingredients; and Potatoes & Seaweed Croustillant with burnt cream and the rich marine flavours of sea urchin.
The menu continues with Scallop, accompanied by silky vichyssoise, fragrant leek oil and caviar, followed by Agnolotti with orange and saffron.
For the seafood course, Atlantic Cod is paired with Jerusalem artichoke, the richness of bisque and the warm fragrance of tonka.
A centerpiece of the evening is the Pie “Grande Tradition” Pigeon, served with Bresse chicken and foie gras. Paying homage to the grand traditions of French cuisine, this elaborate preparation celebrates the technical precision and generosity that define the cooking of both chefs.
The experience concludes with two desserts by Head Pastry Chef Eve Minialai: Yoghurt with honey and toasted walnut, offering a refreshing interlude, followed by Clementine with grilled chestnut and hazelnut praliné, a comforting seasonal finale that balances bright citrus with warm, nutty flavours.
An optional wine pairing has been selected to complement the progression of the menu, featuring an eclectic selection of wines including Clandestin Boreal “Cuvée Spéciale Louise” 2022, Knewitz Riesling Trocken 2024, Kindeli Naranja 2024 and Rouchier Saint-Joseph La Chave 2021. The evening concludes with a Sauternes Cru Barrejat 1998, accompanying the final dessert.
With only two evenings available, this special collaboration offers Hong Kong diners a rare opportunity to experience Chef Julien Royer and Chef Loïc Portalier cooking together at Louise, celebrating their longstanding culinary relationship and the French heritage that continues to inspire both restaurants.
About Chef Julien Royer & Odette
Born in Auvergne, France, Chef Julien Royer developed an early appreciation for seasonal ingredients and honest cooking through his upbringing in the French countryside. His culinary career began under the legendary Michel Bras in Laguiole, followed by experience with Bernard Andrieux and in kitchens across the French West Indies, Polynesia and London, before relocating to Singapore in 2011.
In 2015, Julien opened Odette in partnership with The Lo & Behold Group, naming the restaurant in tribute to his grandmother. Located within Singapore’s historic National Gallery, Odette celebrates modern French cuisine through exceptional seasonal produce, classical techniques and influences drawn from Asia. The restaurant has earned three MICHELIN stars since 2019 and achieved the No. 1 position on Asia’s 50 Best Restaurants list in both 2019 and 2020, cementing its reputation as one of the region’s most acclaimed dining destinations.
