With a change in season, Margo presents a new lunch and dinner menu inspired by the regional cuisine of Europe – famous for its rich, hearty fare and home to some of the world’s most coveted ingredients such as white truffles and porcini mushrooms – MARGO brings a unique taste of the autumn harvest to Hong Kong.
New dishes by Chef Mario include Fukuoka Snow Crab Cocktail (HK$148), a modified version of the ‘90’s style prawn cocktail, served with green asparagus and seaweed brioche with a cocktail sauce of ketchup, mayonnaise and horseradish cream; Celeriac with Boudin Noir & Ercolini Pear (HK$228), an homage to a traditional German countryside dish called Himmel und Erde (Heaven and Earth) featuring whole-roasted celeriac that is sliced, pan-fried and used as a base for Boudin Noir (French-style blood sausage).
Hokkaido Scallops with Pumpkin (HK$258) using juicy scallops from Hokkaido topped with pumpkin salad, pumpkin puree, and roasted pumpkin seeds; Wiener Schnitzel with Potato Salad, Champignon-Foie Gras Duxelle & Cucumber Salad, an elevated twist on the traditional German-Austrian veal schnitzel made instead with a highly tender and extra-decadent sirloin.
Grilled Pike Perch (HK$378) served as a roulette with pan-fried pike perch with barley and bacon wrapped with seasonal savoy cabbage leaves, and buttermilk sauce infused with fish head and bones; and finally, Puntalette with Black Trumpet Mushroom & Balsamic-Glazed Radicchio (HK$328), a homemade rice pasta cooked like a risotto and infused with mushroom tea for a powerful umami flavour, served with roasted corn, walnuts, and shavings of raw button mushrooms.
Intimate Chef’s Counter Experience for Two with Chef Mario Paecke
MARGO launches an intimate Chef’s Counter experience, where guests can experience Margo’s bespoke Tasting Menu and get a close-up with Chef de Cuisine Mario Paecke as he journeys guests through the creative process in redefining European gourmet with inspirations drawn from his German origins. The counter currently seats two guests at a time, providing the opportunity to enjoy front-row seats to a highly interactive tasting menu curated by Chef Mario. The seasonally changing tasting menu is priced at HK$1,200+10% per guest, with optional additions of 3-cheese selections for +HK$228 or 6-cheese selections for +HK$448.
