Three MICHELIN-starred and MICHELIN Green Star Amber, led by Richard Ekkebus, brings together some of Hong Kong’s most celebrated culinary talents for the exclusive Ten Hands Alcohol-Free Pairing Dinner on 27 October. Joining Ekkebus are Agustin Balbi of one MICHELIN-starred Andō, Antimo Maria Merone of one MICHELIN-starred Estro, and Paulo Airaudo and Luigi Troiano of two MICHELIN-starred NOI by Paulo Airaudo. Taking place following the reopening of The Landmark Mandarin Oriental, Hong Kong, the one-night-only collaboration brings together four restaurants, each contributing their own culinary perspective to a specially created multi-course menu.
The menu showcases signature creations from each kitchen, including NOI’s Tuna Belly with Uni, Kristal Caviar & Dashi Jelly and Blue Lobster with Maïs, Beurre Blanc and ’Nduja; Andō’s Ama Ebi with Roasted Peppers, Caviar & Cava Foam and Yi O Local Caldoso Rice with Scallops & Squid; Estro’s Bottoni with Buffalo Robiola, Turnip Tops & Bottarga and Pigeon with Burned Leek Terrine and Pepper Berry Jus; and Amber’s Steamed Akamutsu with Obsiblue Shrimps & Guanciale, followed by a vegan chocolate dessert. The evening concludes with a selection of petits fours from all four restaurants.
Complementing the menu is an exclusive eight-glass alcohol-free pairing by Dutch beverage specialist Bram Klinge, founder of Pure by Bram Klinge, whose international experience includes acclaimed European restaurants The Jane and RE-NAA. Treating each drink as an extension of the kitchen, Klinge draws on fermentation, clarification, distillation and extraction to create layered combinations of sweetness, acidity, salinity, umami and bitterness. Developed specifically for the evening, his pairings respond to the flavours, textures and aromas of each course, bringing a new dimension to the dining experience.
