• Chef Loïc Portalier welcomes Chefs Pierre Chomet and Matthias Marc for a collaborative menu celebrating contemporary French cooking on 19th May

    THREE CHEFS, THREE DISTINCT PATHS

    The evening brings together chefs at different points in their careers, united by a shared French foundation and a willingness to push beyond it.

    Chef Pierre Chomet, chef-owner of AMBOS and TINA, brings a cuisine shaped by years spent across South America, Europe, and Asia. His cooking draws from these experiences – not as fusion, but as a personal synthesis of techniques and flavours developed over time

    Chef Matthias Marc, whose previous Paris restaurant Substance holds one MICHELIN star, is recognised for his ingredient-driven approach and commitment to sustainability. His cooking reflects his roots in the Doubs region, where he will return to open his next restaurant later this year, La Maison des Cimes.

    At Louise, they join Loïc Portalier, whose cooking is guided by the vision of Julien Royer, grounded in French technique with a focus on seasonality.

    FRENCH FOUNDATIONS, PERSONAL EXPRESSIONS

    The collaborative menu begins with a series of grignotages – playful bites that reference both tradition and reinterpretation. These include a refined take on soupe à l’oignon served as a consommé, a Comté tartelette paired with wasabi and umeboshi, and sea snails with curry mayo and lime leaf furikake.

    Seafood courses follow with Japanese squid accented by white asparagus, citrus, and Kristal caviar, before moving into a richer, more regional expression with gnocchi layered with cancoillotte, saucisse de Morteau, and chive oil – a nod to eastern French terroir.

    The main courses continue this interplay of heritage and modernity. Confit Atlantic cod is paired with vin jaune, fir buds, and sweet peas, while Cantal pork is enhanced with smoked sardine and chimichurri, bringing depth and contrast to the dish.

    Desserts by Louise’s acclaimed pastry chef Even Minialai close the menu with a lighter organic citrus course with verbena and crème fraîche, followed by Chocolat with miso and grué, balancing sweetness with savoury complexity.
