    A SEASONAL JOURNEY ROOTED IN CHAOSHAN WISDOM

    The Winter menu introduces up to 14 new dishes inspired by Chaoshan culinary philosophy, which values seasonality, restraint, and the nourishing role of food. Winter is traditionally a time for slow cooking and gentle heat, allowing flavors to deepen while supporting balance and vitality. Preserved elements such as aged radish and naturally fermented pickles, long-simmered tonic soups, and seafood and meats prepared with clarity rather than heaviness reflect a cuisine rooted in harmony and comfort. Through refined technique and meticulous sourcing, Selection by Du reinterprets the warmth of a Chaoshan family table within a modern fine-dining setting.

    The menu unfolds across a complete seasonal journey, from light, appetite-opening starters like autumn pear and seasonal fruit salad, marinated roe crab, and scallop with 30-year-old preserved radish, to a signature Winter Tonic Five-Black Soup slow-simmered for nourishment. Main and hot dishes highlight premium ingredients – giant scallops in chicken oil, yellow cattle tenderloin with aged lily bulbs, braised Albas lamb, poached golden grouper in pickled mustard broth, and simmered marbled pork – balanced by a comforting braised rice with sausage and radish. Desserts conclude the experience with both tradition and refinement, from crisp taro paste dumplings to exclusive French-inspired creations featuring pear, pecan, chocolate, and black truffle.
