Each dish is a piece of culinary history, researched from manuscripts, Ayurvedic texts, and oral traditions, then reimagined with modern finesse.
Highlights include Rasam, a tangy fish cheek broth inspired by ancient healing elixirs; Shishranga Murg, a six-colour Mughal chicken slow-braised with saffron and dried fruits; and Qaliya Shirazi, a golden Persian lamb stew adapted in the Mughal courts. Warrior staples like Kola Urandai lamb croquettes and Aashsham Khichdi barley kedgeree celebrate India’s culinary resilience, while the delicate Khaja sweet pastry offers a nostalgic finale.
