This July, Hong Kong diners are invited to a rare culinary convergence as Sushi Fujimoto and Two MICHELIN-Starred NOI at Four Seasons Hong Kong unite for a two-night collaboration. On 16 July at NOI and 17 July at Sushi Fujimoto, the chefs will present exclusive seafood-led menus that blend Japanese Edomae sushi with contemporary Italian artistry. Helmed by Chef Kenichi Fujimoto and Chef Luigi Troiano, the collaboration celebrates their shared reverence for seasonality and technique – from Chef Fujimoto’s refined sushi heritage under masters Shinji Kanesaka and Takashi Saito, to Chef Troiano’s experience across Europe’s MICHELIN-starred kitchens under the guidance of Chef Paulo Airaudo.
Sushi Fujimoto, housed in FOCO, has quietly earned its place among Hong Kong’s most coveted sushi destinations with just nine seats and accolades from Tatler Best, SCMP, and Harper’s Bazaar. Meanwhile, NOI has swiftly become a standout on the city’s fine dining scene, pairing harbour views with an open kitchen and inventive tasting menus. This exclusive collaboration, priced at HK$3,180 + 10% per guest, offers a unique opportunity to witness two culinary philosophies in harmony. Optional drink pairings are available, with limited seating across both evenings – including two sessions (6pm and 8:30pm) on 17 July at Sushi Fujimoto.
