Anne-Sophie Pic’s new seasonal creations at Cristal Room weave fragrance, texture, and memory into a narrative tailored for Hong Kong. Highlights include summer “Les Berlingots” pasta in a chrysanthemum-laced green-tomato consommé; charcoal-grilled kinmedai with bay-leaf sabayon; miso-coffee-marinated Charolais beef fillet over smoky eggplant; and beeswax-aged Limousin sweetbread finished with osmanthus and lavender. Seafood takes centre stage in smoked Kuruma shrimp on pea-bean chawanmushi and a Yunnan matsutake–abalone duet slow-cooked with kombu and gyokuro. Desserts balance bright fruit and subtle botanicals—from raspberry confit with sea-fennel ice cream to coriander-tinged Mekonga chocolate and a mille-feuille layered with coffee, meadowsweet caramel, and ginger Chantilly.
Diners can enjoy these ideas through three formats: the three-course “Savoir-Faire” lunch (from HK $680), the six-course “Voyage” tasting dinner (from HK $2,280), and a flexible à-la-carte menu requiring any three courses. Each path juxtaposes French technique with regional accents—think frog legs meunière in laksa-lapsang consommé or Hokkaido scallop carpacciocrowned with smoked-eel ice cream.
