Guests are invited to savour her iconic creations such as Les Berlingots ASP©️ — a dish that has become an enduring symbol of her cuisine — featuring sobacha pasta filled with 24-month aged comté and served with Roscoff onion consommé, Tuber Melanosporum truffle and pink pepper. Drawing inspiration from regional flavours, another noteworthy dish blends Yunnan Chinese peas, geranium rosat leaves, Gyokuro tea, luscious Kaviari Oscietra caviar, and Brittany blue lobster, cooked over smoldering embers and paired with coral beurre blanc infused with Douglas fir and rosemary, then delicately finished with a carrot voile.
