    NEW SEASONAL DISHES AT THE LEGACY HOUSE

    The Legacy House unveils a new selection of seasonal dishes, starting with new dim sum choices such as Fish Dumplings (HK$120/3pc) shaped to appear like fish larvae with fillings of pork, shrimp paste and land fish in supreme soup, and vegetarian-style Steamed Rice Rolls (HK$100) with bamboo pith, quinoa, pumpkin and matsutake mushroom. Enjoy alongside an appetiser of Marinated Amber Jelly Fungus (HK$280) with geoduck and Yunnan morels.

    A newly added nourishing soup on the menu is Double-boiled Fish Maw Soup, simmered with sea whelk, bamboo pith and young coconut (HK$880). New seafood dishes not to miss include Braised Bird’s Nest Soup with crab claw (HK$1,180), Steamed Crab Claw in chicken broth with tofu (HK$520), and Steamed Scallop and Shrimp with umami-rich lobster broth (HK$360/person).

    Conclude the savoury portion of the meal with a comforting new rice dish of Lotus Leaf-Wrapped Rice , slowly steamed with conpoy, mushroom, chicken, crab meat, duck meat, and bamboo shoots (HK$480).

    ANNUAL DRAGON BOAT FESTIVAL DUMPLINGS

    The Legacy House celebrates the centuries-old Dragon Boat Festival (Tuen Ng Festival) with the launch of traditional rice dumplings crafted by Chinese Executive Chef Li Chi-Wai. Known today as zongzi, the unique pyramid-shaped dumplings play a symbolic role during the annual boat-racing festival due to legends tied to this delicious traditional delicacy, which Chef Li honours through his painstaking preparation process.

    Prepared fresh daily, the special Dragon Boat Festival sweet and savoury glutinous rice dumplings are the perfect gourmet gift for friends and family. Each environmentally friendly package contains two limited edition premium glutinous rice dumplings priced at HK$598 and will be available from 22 May onwards at both The Legacy House and Rosewood Hong Kong’s online shop at HERE.

    The first step of the meticulous dumpling-making process is to soak and soften the glutinous rice in alkaline water. For the Steamed Sweet Rice Dumpling with Chestnut, the glutinous rice is stuffed with whole chestnut, lotus seed, pork meat, abalone, mung bean, mushroom, spices, and dried scallop. The second variety, the savoury Steamed Rice Dumpling with Abalone, Pork & Mushroom, is filled with the auspicious “eight treasures” ingredients including six-headed South African abalone, pork belly, chestnut, lotus seed, conpoy, chanterelle, porcini, and shiitake, which have been seasoned with Shao Hsing Hua Diao wine, soy sauce, sugar and five-spice. Both dumplings are then wrapped with dried bamboo leaves to form the traditional pyramid shape and then slow-boiled for seven hours. 

    NEW BAIJIU PAIRING TASTING MENU EXPERIENCE

    Indigenously made  in China for over 1,000 years, Baijiu is an omnipresent part of Chinese culture as it is often considered a social drink. Baijiu is a distilled Chinese spirit made from starchy raw materials such as grains, with an ABV ranging between 38%-68%.  The Legacy House pays homage to the country’s most popular spirit with a new Baijiu Tasting Menu (HK$1,888+10% per guest) that pairs elegant Moutai cocktails with regional dishes by Chef Li. Moutai, a style of Baijiu, is characterized by its unique deep, savoury flavours under the “Sauce Aroma” category of Baijiu. The “Sauce Aroma” is reminiscent of traditional Chinese sweet sauce, pickled cucumber and soy sauce; some might also have a unique combination of Tobacco, clove, red bean paste, and crispy rice on the nose. Made popular among Western drinkers in recent years, Moutai is produced exclusively in Maotai in China’s Guizhou province and is the official spirit served at all state banquets.
