• Two Michelin-starred TATE Dining Room to host a special collaboration lunch & dinner with Chef Pam Soontornyanakij from One Michelin-starred restaurant Potong Bangkok

    On 17th and 18th May 2023, two MICHELIN-starred TATE Dining Room is set to host a powerhouse chef collaboration between its own chef current Tatler Dining Asia’s Chef of the Year, Chef Vicky Lau and visiting chef Pam Soontornyanakij of one MICHELIN-starred Restaurant Potong, one of Bangkok’s current hottest tables. The special TATE x Potong four-hands menu will be available for dinner on Wednesday 17th May, and both lunch and dinner on Thursday 18th May.

    Located in the heart of Bangkok’s Chinatown, Restaurant Potong is set within an historic 120-year-old Sino-Portuguese building that formerly housed the chef’s family’s Chinese herbal medicine business. Potong quickly rose in fame since opening its doors in 2021, gaining one MICHELIN star and ranking no.35 on Asia’s 50 Best Restaurants 2023 among a host of other prestigious accolades. At Potong, award-winning chef-owner Pam translates her emotions via a 20-course tasting menu of innovative Thai-Chinese cuisine, an homage to her mixed heritage. For the first time in Hong Kong, Chef Pam will join Chef Vicky at TATE Dining Room to create an exquisite collaborative tasting menu that fuses French Chinese and Chinese-Thai flavours.

     

    “Chef Pam and I met back at the 2022 MICHELIN Guide Gala Dinner in Bangkok which we were both cooking for the event, and there was an instant connection. We share very similar culinary philosophies, starting with our foundational approach to cuisine as a form of storytelling on a plate,” says Chef Vicky Lau. “I feel very honored to be the first to host Chef Pam in Hong Kong.”

     

    “I have wanted to cook in Hong Kong for a long time, and it is most fitting that my first time in this incredible city is through a collaboration with my good friend Chef Vicky at TATE Dining Room. We are both advocates of melding tradition with progressive flavours, and our menu is a reflection of this from two unique yet complementary perspectives.” says Chef Pam.

    Priced at HK$2,880+10% for dinner and HK1,880 + 10% for lunch (with additional wine pairing options), the full TATE Dining Room x Potong collaboration menu is as below:
