ASIA’S 50 BEST RESTAURANTS 2023 – NO.#31 AND BEST SOMMELIER AWARD
This year, Ensue continues to be the only restaurant in Shenzhen to enter the prestigious Asia’s 50 Best Restaurants list, ranking no.31. Ensue brings to life the newfangled vision of Christopher Kostow — to translate the farm-to-table culture of California in the bustling metropolis of Shenzhen. Ensue climbs to new heights as it celebrates its inclusion in the top 50 list among respected culinary pioneers in the region.
In addition to earning a spot on the list, Ensue’s own Head Sommelier Della Tang has been awarded the Beronia Asia’s Best Sommelier Award 2023, a brand new award category by Asia’s 50 Best Restaurants. Already a shining star in China’s wine community, Della’s talent and passion for wine and service earned her the coveted title.

ABOUT DELLA TANG, HEAD SOMMELIER AT ENSUE
Born and raised in Shenzhen, Della Tang is a rising star among female sommeliers in China. She started off her journey as an intern at Chateau Caronne Ste. Gemme in Bordeaux, assisting with grape harvesting and wine vinification. She then earned a certification in Wine and Management from Le Cordon Bleu Paris. Prestigious sommelier internships were completed in two of Paris’ most respected restaurants – Yam’Tcha and Le Taillevent, before moving back to China to take up the position as sommelier at Shanghai’s Maison Lameloise.
Bringing her passion to Ensue, Della is the Head Sommelier and the mastermind behind the expertly curated wine list. She is responsible for managing the wine business and portfolios for Ensue, as well as the other four restaurants under Savor group, a high-end restaurant group in Shenzhen. Within the first year of opening for Ensue, the exclusive wine list won multiple awards including ‘Best Wine List’ and ‘Best Champagne List’ in China in 2020.
At Ensue, Della Tang has curated a dazzling array of references that range from notable estates to understated grower champagnes on the wine list. With a strong passion for food and wine, she has helped to design wine pairings that complement the culinary prowess and seasonal cuisine of the restaurant. In 2020, Della also won the title of ‘2020 China’s Best Sommelier’ and ‘Best Champagne Sommelier’, and is a dazzling new star in the Chinese wine industry. This year, she was awarded the inaugural Beronia Asia’s Best Sommelier Award 2023 at Asia’s 50 Best Restaurants hosted in Singapore.
NEW SPRING TASTING MENU
Chef Christopher and Chef Miles have created a new springtime menu with a focus on organic Chinese ingredients. Selected, cooked and presented with respect for the seasons, the products are made to shine through their natural simplicity. Highlights of the menu include Fujian Squid with black radish and caviar, Scallop Tofu with threadfin and spicy & sour cabbage, ‘Eight Fairies of the Water’ with chicken and whelk, Chaoshan Goose Liver with sesame and salted plum, and a dessert of White Strawberry with whey and lemon verbena.
