• Ramato unveils new seasonal dishes, new Friday lunch menu and a Chef’s menu

    New A La Carte Dishes: Southern Italian Familial Comforts at Ramato

    The new a la carte dishes (a total of 6 dishes) at Ramato take inspiration from recipes by Chef Matteo’s Sicilian grandmother, giving nostalgic dishes from his childhood new life. Calamaro Ripieno (HK$228) is one such dish that reminds him of his time spent with his nonna, featuring potato stuffed calamari on a bed of smoked eggplant puree and tomato sauce. Other new dishes include Fettuccine Lobster (HK$298) with homemade fettuccine, a sauce of clam and lobster jus, garlic, lobster meat, and Italian cherry tomatoes. A popular dish in southern Italy, Cavatelli alla Pescatora (HK$248) is created with homemade cavatelli, and assorted seafood ragu made with cuttlefish, prawns, mussels, clams, and calamari.

    Chef Matteo introduces his take on Lasagna (HK$218), a “one-layer lasagna” a homemade pasta topped with bechamel and traditional ragu alla Bolognese, inspired by his love for the crunchy and saucy top layers of lasagna as a child. Ravioli di Zucca (HK$168) is inspired by a traditional northern Italian dish “Tortelli alla Mantovana” originating from Emilia-Romagna, which is re- created with homemade ravioli filled with pumpkin, mascarpone, and Parmesan with a sauce of emulsified butter and sage. The dish is finished with grated Parmesan and a crunchy topping of walnut crumble.

    End the meal on a high with Chef Matteo’s newest dessert, Caprese Cake (HK$98), inspired by traditional Torta Caprese and named after the island of Capri from which it originates. Ramato’s gluten-free version of the cake uses almond flour and dark chocolate and is finished with milk chocolate sauce.

    New Friday Set Lunch Menu
    In addition to a reduced a la carte menu with the restaurant’s fan favourite dishes, a new set lunch menu will now be available on Fridays at Ramato starting on 14th October onwards. Guests may choose between enjoying 3 courses priced at HK$228+10% or 4 courses priced at HK$298+10%.

    The new lunch set begins with a choice of antipasti such as Panzanella di Gamberi, a salad of prawn, cucumber, cherry tomatoes, and pickled onions; Salumi & Gnocco Fritto, a platter of Italian mixed cold cuts and fried dough; and Carpaccio di Manzo, Rucola & Perle di Balsamico (+HK$38) with beef carpaccio, rocket, parmigiano and balsamic pearl. The second course is a delectable homemade pasta with choices including Cavatelli, Salsiccia & Broccoli featuring homemade cavatelli, broccoli and Italian sausage; Tagliatelle ai Funghi with homemade tagliatelle and mushrooms; Pappardelle al Ragu with homemade pappardelle, pork and eggplant ragu and fennel pollen; and Fettuccine Lobster (+HK$108) with homemade fettuccine, lobster, and cherry tomatoes. Choices of secondi plates consist of Pollo Arrosto & Patate with baby chicken and roasted potatoes, Gamberoni alla Griglia (+HK$108) with grilled king prawns, and Branzino, Scarole & Pomodoro, a hearty dish of seabass with sauteed endives, pine nuts, raisins, and tomato bisque.

    Conclude a long Friday lunch at Ramato with a choice of Italian dessert, including Cannolo Siciliano with ricotta cream, pistachio, and candied orange; Caprese Cake gluten-free chocolate cake with milk chocolate sauce; and Ramato Tiramisu (+HK$48) with mascarpone cream, marsala and Savoiardi biscuit.

    New Chef’s Choice – “A Taste of Italy” Menu

    Priced at HK$780 + 10% per person, the new Chef’s Choice “A Taste of Italy” Menu (up to 6-7 courses) takes guests on a journey through Ramato’s all-time favourite dishes, including Chef Matteo’s finest signature plates and seasonal daily specials that are off menu. Dishes will be served both individual and family-style for the whole table, inviting deeper connections over good food served with care.
