    <<13th August, 2024 – Hong Kong>> This September, Rosewood Hong Kong is set to collaborate with The Academy by Simon Rogan in an exciting partnership aimed at nurturing culinary talent and advancing the hospitality industry through a series of engaging activations, including a collaboration dinner, masterclass, fireside chat and cultural tour. Rosewood Hong Kong and Academy by Simon Rogan share the same commitment to inspire, enrich, and make a positive impact on both individuals and the environment with circular hospitality at the core of both operations.

    ‘Rosewood Empowers’ is the focus of this collaboration, with the hotel dedicated to developing and nurturing new talent through education and upskilling. A significant component of the ‘Rosewood Empowers’ initiative is the global internship programme, developed in partnership with the International Culinary Institute (ICI), a member institution of the Vocational Training Council (VTC). This initiative aims to expand perspectives, foster talent, and enhance standards within the hospitality and tourism sectors.

    Simon Rogan is an internationally-renowned British chef with eight MICHELIN Stars and two MICHELIN Green Stars to his name; he also stands at the forefront of the farm-to-table movement world-wide. His restaurant empire today spans nine award-winning establishments across two continents and continues to be recognized by their respective communities for their efforts in sustainability.

    The Academy by Simon Rogan was launched in July 2021 to provide culinary students with a unique hands-on learning experience and to develop the skills needed for a successful career in hospitality. The Academy was also conceived as a direct response to the ongoing staffing issues faced by the hospitality sector, with a mission to reignite passion for the industry and provide weight for those who choose to work within it.

    With a total of 9 students visiting from UK and a total 20 students from International Culinary Institute of VTC participating in the program, the students will first join a masterclass led by Sam Ward, Simon Rogan’s worldwide Managing Director will provide Rosewood’s culinary trainees with invaluable insights and practical knowledge on 28 August.

    This collaboration will be followed by a fireside chat with acclaimed chef Simon Rogan on 2 September, where Rosewood trainees, Academy apprentices, and ICI students can engage in an illuminating fireside chat session to broaden their horizons, nurture their talent, and elevate standards within the hospitality and tourism sectors.

    The partnership will cumulate on 2 and 3 September, with a special collaboration dinner showcasing a six-course banquet-style feast prepared by the Academy by Simon Rogan apprentices and ICI students at Botanical Kitchen, Rosewood Hong Kong’s newest event space.     Priced at HK$788 per guest, the six-course menu will feature dishes thoughtfully created and presented by Academy by Simon Rogan apprentices in partnership with ICI students and instructors. Optional beverage offers are available – including a three-glass wine pairing option at HK400 per guest; or a special “Sense of Flavours Drink Menu” presented by Rosewood Hong Kong’s XX bar.

    The partnership will conclude with a cultural day excursion on 4th September where the Academy by Simon Rogan apprentices will visit local wet markets, the VTC Pokfulam Complex and ICI campus together with students and chefs from Rosewood Hong Kong.

    About The Academy By Simon Rogan

    Created in collaboration with Kendal College, one of the best hospitality schools in the UK, the Academy has been specifically designed to take students on an exciting journey into the world of hospitality through immersive hands-on learning. The cutting-edge learning package has been designed to provide participants with a range of extraordinary skills that will escalate their passion for food and drink and provide them with a strong foothold in the hospitality industry. Ultimately helping the students to grow as individuals and develop a career in one of the UK’s leading restaurant groups.

    The course runs for 15 months, culminating in a fully expensed week-long trip to Hong Kong, to work with the Head Chef in Roganic, Aulis and The Baker and The Bottleman – with all flights and hotel accommodation paid for. Throughout the programme, students work across the restaurant kitchens (L’Enclume, Rogan & Co and Henrock) in the Lake District for four days a week. This gives each student a unique insight into Simon Rogan’ s farm-to-fork ethos and overall vision, as well as a detailed understanding of sustainable restaurant practices, which is further enhanced by working alongside the team at Our Farm.

    Within each restaurant rotation the apprentices work across every section in the kitchens to learn as much as possible. The fifth day is spent at Kendal College learning the essential skills needed to develop a successful career in the kitchen and attain an accredited Apprenticeship. Upon completion of the apprenticeship, apprentices are awarded the Level 2 Production Chef apprenticeship qualification.

    About Simon Rogan MBE

    Simon Rogan MBE is an internationally renowned, award-winning chef, recognised as one of the pioneers of  the farm-to-table movement. In 2002, Simon opened his debut restaurant L’Enclume in The Lake District village of Cartmel, with a focus on hyperlocal and seasonal ingredients. The restaurant currently holds three Michelin stars as well as the top ranking in La Liste with Simon Rogan being the first British chef to achieve this.

    Simon opened Rogan & Co, his second venture in Cartmel in 2008 which won its first Michelin star in 2018.  In 2011, Simon established Our Farm in The Lakes, which provides the restaurant group with high quality, sustainable produce. In 2016, Simon launched Aulis Cartmel, a six-seater chef’s table experience adjoining L’Enclume. A London outpost of Aulis arrived in 2017 as a standalone 12-seater chef’s table in central Soho, which was awarded its first Michelin star in 2024.

    Simon expanded his restaurant portfolio to Hong Kong, opening Aulis in January 2019 and Roganic in February 2019. Roganic Hong Kong was awarded its first Michelin star in December 2019. In October 2019, Simon opened Henrock, an informally elegant restaurant set within Linthwaite House, a contemporary country house hotel in the heart of the Lake District.

    In 2020, in response to the global pandemic, the group launched Home by Simon Rogan, a delivery offering providing three-course ‘at home’ dining experiences created in The Lakes. In 2021, Simon’s efforts towards sustainability were recognised with the newly introduced Michelin green star, awarded to both L’Enclume and Roganic Hong Kong.

    In 2022, Simon opened a Hong Kong based bakery and restaurant The Baker & The Bottleman, and in the same year L’Enclume was awarded its third Michelin star, the first restaurant in the north of England to do so. This coincided with the group celebrating 20 years since Simon opened L’Enclume. In early 2023, he expanded his portfolio to Valletta, Malta with the opening of ION Harbour by Simon Rogan, and in 2024 the restaurant became the first ever restaurant on the island to be awarded with two Michelin Stars. In December 2023 the group expanded into Thailand, with the opening of Aulis Phuket.

    In 2023, ‘A Day at Our Farm’ welcomed its first guests, Simon’s seasonal, al fresco dining experience located on Our Farm, and awarded Best Farm to Table restaurant at the 2024 Good Food Guide awards, and runs throughout the warmer months, In 2023, Simon was recognised with a top accolade at the Craft Guild of Chefs Awards, and is currently vice president of the Bocuse d’Or UK team.
