<<25th September 2024 – Hong Kong>> One MICHELIN star and MICHELIN Green Star-awarded MORA is thrilled to announce the launch of its new autumn lunch and dinner menus. Under the direction of Cheffe-Founder Vicky Lau and MICHELIN Guide Hong Kong & Macau’s Young Chef Award winner, Head Chef Choi Ming Fai, MORA presents a revamped seasonal dining experience, featuring simplified 5 and 6-course menus highlighting local ingredients, complemented by a curated beverage pairing.
Soy-based French x Chinese cuisine at MORA: New CHARACTERS OF SOY lunch and dinner
Open for dinner from Tuesday – Saturday and lunch from Friday-Saturday, MORA unveils its latest CHARACTERS OF SOY menus with a new format. Each course reflects MORA’s commitment to sustainability and quality, celebrating the dedication of local producers and artisans in providing fresh and diverse ingredients for a truly memorable dining experience.
The new lunch menu, priced at HK$580+10% for 5 courses, spotlights house-made soy products in dishes like Bean Curd Tartlet with soy ricotta and baby shrimp, Cold Lobster Noodle (+HK$98) with Sakura shrimp in soymilk lobster bouillon, and Warm Hokkaido Scallop (+HK$138) with fermented tofu clam jus. Diners can choose between the Three Yellow Chicken Roulade with smoked hard tofu and seven-spice chicken, or the Crispy Threadfin with braised soybean and chicken fat soy emulsion. The meal concludes with the Mora Mapo Tofu Rice and Tofu Pudding with black rice soy ice cream and fig compote.
The dinner menu, priced at HK$980+10% for 6 courses, includes evening-exclusive dishes such as Creamy Tofu with razor clam and avocado, Deep Fried Tofu with squid, sesame sauce, pine nuts and radish, Camouflage Grouper Tofu Skin Roulade (+HK$138) with herb sauce, and Roasted Pigeon with smoked hard tofu and seven-spice pigeon jus. This is followed by the same sweet ending as lunch.

MORA’s new autumn menus are perfectly complemented by a thoughtful selection of beverage pairings. For +HK$148, guests can enjoy two brews of premium Chinese tea, while the +HK$288 option includes a glass of sake along with Chinese tea. The +HK$488 selection offers three glasses of wine pairings, elevating the dining experience with a touch of sophistication.
