Chef Loïc Portalier and Chef Wilfrid Hocquet unite celebrating contemporary French bistro cooking

[10th August, 2026 – Hong Kong] This September, One MICHELIN-starred Louise’s La Terrace by Louise welcomes one of Bangkok’s most exciting restaurant openings for an exclusive two-night collaboration. On 8 + 9 September 2026, Executive Chef Loïc Portalier will host Chef Wilfrid Hocquet, Executive Chef and Co-Founder of MARGO, the recipient of MICHELIN Guide Opening of the Year Award in 2026 for a special collaborative à la carte menu celebrating modern French bistro cuisine. Following the Hong Kong event, the collaboration will travel to Bangkok, where Chef will join Chef Wilfrid at MARGO on 22 and 23 September, bringing the culinary exchange full circle.
While each restaurant has its own identity, both chefs draw from the same French culinary foundations, interpreted through their own experiences, local ingredients and personal style. Throughout the collaboration, guests will have the opportunity to experience how each chef interprets this shared heritage through seasonal ingredients, thoughtful technique and bold yet uncomplicated flavours.
Originally from Montpellier in southern France, Chef Wilfrid Hocquet has spent over two decades cooking in some of the world’s most celebrated kitchens, including Le Jardin des Sens (Three MICHELIN Stars), Louis XV – Alain Ducasse (Three MICHELIN Stars) in Monaco, Daniel (Two MICHELIN Stars) in New York and Benoit Paris (One MICHELIN Star). In 2019, he returned to Bangkok to open Blue by Alain Ducasse, earning One MICHELIN star in its first year and maintaining the accolade through 2025.
Today, at MARGO, Chef Hocquet has distilled that experience into a relaxed neighbourhood bistro focused on seasonality, craftsmanship and generous French cooking. Opened in Bangkok in 2025, MARGO is a modern French bistro housed within a restored neighbourhood home. The restaurant focuses on seasonal ingredients from Thailand and Europe, applying classic French techniques to a menu of house-made pastas, terrines, charcuterie and desserts.
Meanwhile, Chef Loïc Portalier continues to define La Terrace by Louise as one of Hong Kong’s most exciting contemporary French dining destinations, combining timeless French techniques with vibrant seasonal produce and the warm hospitality that has become synonymous with Louise. Guests can mix and match dishes from Chef Loïc Portalier and Chef Wilfrid Hocquet’s collaborative à la carte menu, available exclusively during the event.
