The group secured dual recognition: Amazing Chinese Cuisine ChangNing earned Two MICHELIN Stars, while Blossom received a Bib Gourmand award. This achievement is further elevated by Three Diamonds recognition from the Black Pearl Restaurant Guide — an honor held by only three restaurants in Shanghai. Founded in 2015 by Chef-Restaurateur Du Jianqing — a native of Puning in Guangdong’s Chaoshan region — Amazing Chinese Cuisine has evolved into a multi-concept group encompassing five distinct dining destinations.

EXECUGIVE CHEF CHEN SHAOXIONG: A LIFETIME SHAPED BY CHAOSHAN FLAVOURS

Leading the kitchen is Executive Chef Chen Shaoxiong, whose culinary philosophy is deeply rooted in his upbringing in Puning.

Growing up in his family’s restaurant, Chef Chen developed an early understanding of the balance and warmth that define Chaoshan cooking. With over three decades of experience, he has refined his craft across leading Chaozhou kitchens before joining the founding team of Amazing Chinese Cuisine in 2015.

As the group’s founding executive chef, he is known for his rigorous approach to ingredient selection and his disciplined, detail-driven cooking style. Under his leadership, the brand earned early recognition from both the MICHELIN Guide and the Black Pearl Restaurant Guide. His cooking today reflects a clear philosophy: honour tradition but allow space for evolution.

AN INTIMATE EXPERIENCE OF CHAOSHAN COOKING TODAY

At Amazing Chinese Cuisine ChangNing, the menu is rooted in the defining principles of Chaoshan cooking – lightness, balance, and an emphasis on natural flavour. Techniques such as steaming, poaching, and slow braising are used to preserve the integrity of each ingredient, rather than mask it.

The chef continues to source key ingredients directly from Chaoshan, including teal and sun-dried shrimps, reinforcing a strong connection to place. Seasonal produce is the absolute core to the menu, with dishes shifting throughout the year to reflect ingredients at their peak.
