For Yong Fu’s Chinese New Year Banquet Menu, Chef Liu not only showcases the traditional aspects of Ningbo cuisine but also incorporates his unique understanding of local Hong Kong ingredients and food culture. The 14-course festive banquet menu, which is designed to share among a group of 10 guests, is priced at HK$29,888 +10% service charge.
In Chinese culture, banquet dishes served during the Lunar New Year hold significant symbolism and auspicious meanings. These special dishes are carefully selected to bring good luck, prosperity and happiness for the year ahead. Highlights of the celebratory menu include decadent dishes such as Pan-Seared Shark Fin with sea anemone in sour soup, for wealth and abundance; Baked Swimming Crab with minced pork and Ningbo-style soybean paste, to signify a year of success and happiness; Poached Free Range Chicken from Siming mountain, representing family unity and good health; and Dried Abalone in golden premium chicken soup, which embodies prosperity. Desserts include Stir-Fried Rice Cakes with yellow croaker roe, and “Ningbo” Sesame Glutinous Rice Dumplings.
