    <<14th June 2022 – Hong Kong>> Bringing a taste of everyday life from the streets of Italy to the ground floor of Victoria Dockside next to the Avenue of Stars, the highly-anticipated BluHouse has opened at Rosewood Hong Kong on 9 June 2022. Italian Chef de Cuisine Giovanni Galeota leads both casual and elevated dining approaches toward authentic Italian cooking, from casual, Roman-style pizzas by the slice at BluHouse to modern Italian gastronomy at The Dining Room by BluHouse.

    Paying tribute to the unique history of Victoria Dockside, BluHouse is named after the Chinese translation of the former Holt’s Wharf (‘Blue Funnel Wharf’), where Rosewood Hong Kong is located. The historic logistics hub eventually made Hong Kong one of the busiest ports in the world back in the 1910s. With its iconic location at the Avenue of Stars, BluHouse boasts panoramic views of the famed Victoria Harbour skyline, and a sun-soaked dining room that serves as a stylish respite from the surrounding bustle of the city.

    Two Dining Approaches: BluHouse and The Dining Room by BluHouse

    BluHouse

    BluHouse comprises of a casual Italian eatery along with a selection of dynamic and convivial food counters. At BluHouse, a range of culinary encounters will carry guests across Italy and into the great cultural cooking traditions of its people – from the barista corner where rituals of coffee and aperitivo come to life and the rosticceria and pizza al taglio that nod to the country’s neighbourhood lunch spots, to enticingly sweet moments at the pasticceria and gelato counter. For guests who wish to bring home the BluHouse experience, they can shop the authentic Italian edit from the restaurant’s dedicated wine cellar and Rosewood Castiglion del Bosco’s kiosk.

    At La Gastronomia deli counter, enjoy a selection of authentic Italian starters such as Octopus Salad with Bella di Cerignola olives and extra virgin olive oil (HK$190), and Veal Tendons and Tongue Salad (HK$138) with lupins and pickled vegetables. Delight in an artisanal selection of Italian Cold Cuts (HK$260), as well as three types of Natural Mozzarella (from HK$210) served with extra virgin olive oil and sea salt, among other high-quality Italian-sourced produce.

    La Rosticceria rotisserie counter offers casual bites and hearty main courses such as Fiori Di Zucca, a stuffed zucchini flower with smoked provola cheese (HK$95), signature Pollo Allo Spiedo (HK$220 half/ HK$400 whole), a free-range yellow Rotisserie chicken brined for six hours and roasted on an open flame; Ariccia style Roasted Pork (HK$198) served with roasted potatoes. Five types of handmade fresh pasta dishes are on offer, including Rigatoni Alla Carbonara (HK$198) with egg yolk, guanciale, Pecorino Romano cheese and black pepper, Traditional Lasagna Bolognaise (HK$198) and more.

    From the six options of hearty mains, choose from the Braised Veal Ossobuco, prepared Milanese-style (HK$260), Stewed Tripe (HK$190) with San Marzano tomatoes, Pecorino cheese, and fresh mint, and vegetarian options such as Eggplant Meatballs with Datterino Tomato Sauce, Basil (HK$180).

    At the Pizza Al Taglio station, which houses eight types of authentic Roman-style pizzas by the slice, indulge on mouth-watering pizzas created with a special dough comprised of 70% water – making it much lighter and easier to digest. Signature slices include Tonno (HK$90) with tuna, red onion, Pantelleria capers, heirloom tomato and fresh basil; and Guanciale (HK$98) featuring tomato sauce-less pizza (‘pizza bianca’) with cured pork jowl, seasonal mushrooms, and caramelised onions.

    Celebrating the Hong Kong spirit in multiple forms, BluHouse features a one-of-a-kind Amaro (Italian herbal liqueur) inspired by Italian traditions whilst respecting Hong Kong flavours. 100% made in Hong Kong, the special Amaro incorporates native flora that grow wild in the city’s backyard.

    Creator of Fernet Hunter Raphael Holzer and Brand Ambassador Sebastian Robinson have collaborated with Simone Rossi and Arkadiusz Rybak to create this exclusive Amaro infused with locally foraged ingredients such as Pomelo Leaf, Cuban Oregano, Citron Leaf, and Mandarin Peel to name few

    The beverage concept at BluHouse is a revival of classic Italian aperitivo drinks such as the Garibaldi, Bellini Campari Shakerato and the iconic Campari Soda served in the same way as the original Camparino in Galleria in Milan. Other features include all-time Italian classics such as a selection of Spritzes and Clay-Pot Negroni that has been rested in a terracotta pot.

    The Dining Room by BluHouse presents a thoughtful balance between tradition and innovation in a refined ambience. An elevated and environmentally conscious Italian restaurant within BluHouse, The Dining Room features two exclusive private dining rooms and an extensive wine cellar that showcases the viticultural diversity of Italy’s varietals and appellations for the perfect wine pairing experience.

    A discovery of Chef Galeota’s skills and expertise honed at MICHELIN-starred restaurants throughout the world’s food capitals, signature plates at The Dining Room by BluHouse include Burrata “D’Andria” with stuffed baby bell peppers, raisins, pine nuts and Tasmanian black truffle; Piedmont Milk-fed Veal Tartare with artichoke, buffalo ricotta, cheese “pantelleria” and capers; Cappelli Alla Genovese homemade veal ‘cappelli’ pasta with Montoro onion sauce, Provolone del Monaco cheese, and Tasmanian black truffle;  La Fiorentina, a 3 kg T-bone Scottoma 30 days dry-aged beef with traditional Tuscan anchovy dip; and a dessert of Nocciole del Piemonte e Cioccolato with Tuscan-style chocolate mousse, acacia honey, pear and rosemary.

    Additionally, The Dining Room by BluHouse will offer a selection of Italian spirits that date back to the 1980’s with the aim of transporting guests back in time to provide an authentic taste of popular aperitif cocktails from 40 years ago in Italy. Highlights of this menu include the 1980’s Negroni, 1980’s American and 1980’s Milano Torino.

    BluHouse’s Social Impact Ethos

    True to its Italian origins, BluHouse sees a genuine Italian culinary experience as a social experience that enables relationships and sharing across the community. Inspired by the concept of “Business with Purpose”, BluHouse is committed to co-creating neighbourhood resilience through donations, employment opportunities and impactful experiences for underserved groups in the Tsim Sha Tsui neighbourhood. The restaurant will pledge 1% of its revenue towards supporting this mission.

    In addition, for every purchase of BluHouse’s sustainable BluCup reusable tumbler, Rosewood Hong Kong will donate HK$40 to RUN Hong Kong in support of local refugees, an amount equivalent to the government subsidy of daily food allowance per person. Every time BluCup is used to buy coffee thereafter, HK$5 will be donated to The Zubin Foundation for upskilling ethnic minorities in the extended neighbourhood.

    Rosewood Hong Kong aims to build a bridge between talent opportunities in Rosewood and overlooked communities through its Opportunity Employment programme. BluHouse is working closely with non-profit organisations such as The Zubin Foundation, Christian Action Centre for Refugees, and RUN Hong Kong to recruit candidates to fill existing openings. The restaurant targets to hire five associates and offer them immersive experiences which will help them maximise their professional and personal potential. Towards the end of 2022, BluHouse will also launch a talent development programme to offer flexible opportunities for less-experienced yet motivated individuals from overlooked communities.

    To help build a sustainable footprint, BluHouse recycles used coffee grounds, and disposes of food waste at O Park 1, Hong Kong’s first organic resources recovery centre that converts food waste into renewable energy. In addition, both dining concepts serve still and sparkling water using the Nordaq sustainable and premium filtering system from Sweden, to eliminate single-use plastic and reduce carbon emissions.
