    <<21st December, 2018 – Hong Kong>> Le Comptoir’s newly awarded 2 Michelin Star restaurant, ÉCRITURE will kick off the New Year with a seasonal Furs & Feathers menu by Executive Chef Maxime Gilbert. From 1-31 January, the French fine dining restaurant will launch a limited time menu focusing on freshly hunted game from around the world. Known for its innovative gastronomy, Écriture provides the city’s most prestigious destination for dining on the season’s finest and rarest wild game.

    Furs & Feathers – Wild Game Menu by Chef Maxime Gilbert

    With hunting season in full swing, Chef Maxime and his team have prepared a series of exquisite game dishes for the Furs & Feathers menu available exclusively throughout January 2019. The menu begins with Grouse, a small, plump and tender dark-meat game bird, followed by the delicate Partridge, another type of game bird with a light, finely textured meat. The young female Doe is known for its slightly leaner and gently flavoured meat, and the Teal wild duck for its succulence. The Hare’s red meat is distinctly gamey in flavour, appealing to the most ardent of wild game lovers. Complement the unique flavours of the meats with decadent shavings of in-season Italian White Alba Truffles, and the sweet and fleshy Japanese winter Persimmon. Guests can opt between 4-courses priced at HK$1,688 per head and 7-courses priced at HK$2,088 per head.

    Grouse

    A medium to large game bird with a plump body and feathered legs

    Partridge

    Medium sized non-migratory game birds, with a wide native distribution throughout the Old World, including Europe, Asia, and parts of Africa

    Doe

    Female of the deer, which are the hoofed ruminant mammals forming the family Cervidea

    Teal

    Medium blue-green colour duck, the common teal presents a similarly coloured stripe on its head

    Hare

    Leporids belonging to the genus Lepus. Hares are classified into the same family as rabbits

    Persimmon

    An edible fruit that resembles large tomato and has very sweet flesh

    White Truffle

    Known as the white Alba truffle. Tuber magnatum pico is famous for its distinct aroma and intense earthy flavour.
