SHÈ – Contemporary Chinese Cuisine
SHÈ is proud to unveil a menu that boasts only premium ingredients prepared in a healthy, home-cooked style. At SHÈ, traditional Chinese dishes are injected with modern flair, adding a guilt-free element to Hong Kong’s beloved cuisine with the use of premium and authentic ingredients. The menu covers categories from Vegetarian Bites to contemporary Chinese Seafood Dishes to Rice & Noodles and Dim Sum, as well as offers up a SHÈ Signature Afternoon Tea Set and Modern Chinese Lunch Boxes.
From the a la carte menu, some crowd-pleasing SHÈ signature small plates include Crispy Tofu with Salt & Pepper (HK$78), Caviar Shrimp Toast (HK$88), an upgraded Hong Kong-style snack topped with deep-fried prawn and Russian caviar, and Stir-fried M5 Wagyu Beef and Wasabi (HK$188), made with lean pan-fried Australian wagyu and infused with soya sauce and homemade Japanese wasabi oil. The irresistibly succulent Honey-Glazed BBQ Iberico Char Siu (HK$198) marinated overnight with a hoi sin and barbecue sauce is one not to miss, along with SHÈ’s signature Double-boiled Fish Maw Nourishing Soup (HK$368), which showcases one of Hong Kong’s finest local delicacies in a nutrient-rich broth that is double boiled for 12 hours with no added preservatives. The Whole Lobster Ma Po Tofu (HK$388) is the perfect sharing dish on a cold winter’s night, combining premium Pacific green lobster with Japanese organic tofu, minced wagyu and homemade ma po sauce made with over ten ingredients.
Ardent noodle lovers will rave over SHÈ’s signature Fish Maw Braised Noodles in Abalone Reduction (HK$298), as well as the Wok-fried Supreme Lobster Noodles (HK$388) created with a hearty mixture of Chinese egg noodles, homemade XO sauce, deep-fried lobster and Chinese vegetables. Conclude the meal on a sweet note with a traditional Stewed Bird Nest with Sweet Papaya(HK$128) dessert, cooked with Thai Papaya or a Stewed Bird Nest (HK$268), with a choice of either coconut milk or rock sugar. For a minimum of two persons and above, a Set Dinner Menu featuring SHÈ’s selected signatures is also available for order at HK$498+10% per guest.
For lunch only, SHÈ serves a contemporary dim sum menu that features delicate handmade creations by the experienced culinary team. Signature bites include the Rose Gold Har Gao (HK$52), tinted a pretty pink with beetroot sauce, and sprayed with champagne to bring out the fresh flavours of the prawns. Others include Iberico Pork Siu Mai with Caviar (HK$52), Crystal Veggie Dumpling (HK$48), filled with a mix of spinach, mushroom, sweet purple potato and lily bulbs, and Pan-fried Handmade Pork Dumpling Bites (HK$56); SHÈ Bao Bao (HK$48/pc) with the choice of roast duck, BBQ pork or pork belly, Purple Lava Buns (HK$52) made with Japanese sweet purple potato and glutinous rice flour for the mochi-like texture, and Stuffed Truffle Balls with Minced Meat and Mushrooms (HK$56), which was inspired by the real truffle and made with 3 types of mushrooms, Iberico pork and bacon. Select dishes from the a la carte and lunch menus are available on the Takeaway Menu, with choices for rice, dim sum, noodles and beverages such as premium fresh juice, JING tea or coffee.
SHÈ – Shanghai Inspired Cocktail Menu
In the 1930’s, Shanghai’s golden age was peppered with influences by French, British and American cultures. As Shanghai’s elite began to indulge in extravagant western lifestyles, glamorous bars and lounges also went on the rise. SHÈ’s tea-tails are inspired by this luxurious yet familiar essence of the old Shanghai era, and include glitzy signature creations such as Bitter Surprise (HK$118), an infusion of Campari Bitter, Amaretto Pronol and Champagne, Cha Cha Matcha (HK$118), made with Curvoiser XO, Mancino Vermouth Ambrato and Matcha Tea, the refreshing Geisha Punch (HK$118), with Hendricks Gin, Elderflower Liqueur, Maraschino Liqueur, Organic Apple Juice and theatrical smoky dry ice, and Tea Room (HK$128), made with Mancino Vermouth Chinato, Zacapa 23 yrs and Chinese Tea, inspired by the fermentation of tea.
SHÈ will serve a unique collection of “Tea”tails, created from a marriage between premium teas and traditional spirits with modern-day mixology techniques, and other Asian-inspired cocktails. In addition to premium spirits and bottled, craft and draught beer, wines will also be available by the glass and by the bottle.
For non-alcoholic options, guests will be able to savour carefully sourced premium tea and coffees, as well as freshly blended healthy juice selections. Drinks will be served indoors and at the alfresco lounge with a spectacular view of the Victoria Harbour.
