Guests are treated to a truly inspiring journey that highlights the fine ingredients selected by Chef de Cave Richard Geoffroy, creator of Dom Pérignon vintages.

    Indulge yourself with the “Dom Pérignon Ultimate Tasting Experience,” a unique invitation to discover Dom Pérignon through tasting noble ingredients in their purest state. Tapping into the creative genius of Hong Kong’s top chefs, this tasting experience presents unparalleled culinary delights selected for its ability to reveal a distinctive facet of the iconic Dom Pérignon Vintage 2006.

    Accenting Dom Pérignon Unique Facets

    Launching from this April and May onwards, guests will be presented with the first Plénitude of Dom Pérignon Vintage 2006, the result of over 9 years of careful elaboration in the cellars. Delicacies chosen to pair with the wine will express the sublime character of the Dom Pérignon Vintage 2006. Each pure and noble ingredient reflects the wine’s singularity.

    When the wine comes into contact with the Pata Negra, it releases dark aromas of walnut, chestnut and purple berries, further emphasizing the wine’s full maturity and complexity.

    Recognized by its black crust and warm, vigorous flavors, Old Comté subtly harmonizes with Dom Pérignon, accentuating the wine’s texture without overshadowing it.

    Carrying a unique aromatic signature due to its mineral quality, Dom Pérignon mirrors caviar with its gray characteristics. Paired with this cherished delicacy, the wine’s minerality is highlighted and brought to a state of near-exaltation.

    Chef Philippe Orrico, a highly noted chef and owner of leading French Michelin-starred restaurant ON Dining, will indulge tasters with simple yet beautifully executed pairings that display his flair for innovation. A French chef trained in his native country, Orrico has garnered a vast amount of experience while working at Michelin-starred restaurants such as Chantecler in Nice’s Negresco Hotel. Presenting a magnificent pairing of Pata Negra and old Comté, Chef Orrico’s exquisite dish will highlight Dom Pérignon’s rich complexity.

    Chef Olivier Elzer of the renowned Seasons by Olivier is a dynamic culinary genius who has taken the Hong Kong food scene by storm. Over the years, Elzer has enjoyed mentorships with culinary legends such as Pierre Gagnaire. For this special experience, Chef Elzer will push the boundaries of culinary ingenuity to masterfully craft dishes that will leave diners craving for more. Through his masterful grasp on French gastronomy, Elzer will present inspired pairings of Pata Negra with Dom Pérignon’s fine wine.

    Multi-award winning chef Shane Osborn of Arcane has achieved what no other Australian chef has – to be awarded one and two Michelin stars at Pied-a-Terre, London. A long-standing advocate of preparing dishes with fresh produce, Chef Osborn brought the rooftop garden concept to the award-winning London restaurant. Lending his expertise, Chef Osborn will delight guests with a dish inspired by vegetables, featuring the Amelia Japanese fruit tomatoes from the Shizuoka prefecture.
