<<8th January 2021 – Hong Kong>> Closed-loop bar PENICILLIN, one of the latest ventures by Hong Kong bar legends Agung Prabowo and Roman Ghale (previously The Old Man, No.1 Asia’s Best Bars 2019), introduces a brand new lunch set with fermented drink pairing, serving on Mondays – Saturdays from 12pm – 3pm.
Inspired by the farm-to-bar movement taking the culinary world by storm, PENICILLIN is Hong Kong’s first sustainable bar that champions a closed-loop model of production. With a focus on either locally sourced or up-cycled food and drink ingredients, PENICILLIN’s bar menu finds innovation in the true flavours of Hong Kong while constantly looking for ways to minimize carbon footprint.
In light of the latest dine-in regulations implemented by the HKSAR government from 3rd January 2021 onwards, PENICILLIN continues to operate during temporary opening hours of 12pm-6pm on Mondays-Saturday (daily) serving food & drinks to guests. Past 6pm, guests will only be able to enjoy takeaway & delivery services to enjoy cocktails at home.
NEW LUNCH SET WITH FERMENTED DRINK PAIRING
The new Flawless Feed (HK$200 with no service charge) lunch set features four appetizers, a choice of main course, and three organic house-fermented drink pairings bursting with beneficial live bacteria, enzymes, vitamins, and minerals, created by the talented bar team of PENICILLIN.
The three organic ferments made with fresh vegetables and fruits provide a unique sensorial drinking experience paired with food. The current pairing drinks include Guava & Baby Carrot, fermented over 5 days with local guava, carrot and detoxifying green tea, Apple Cider, fermented over 7 days with apple, pineapple and honey, and Coconut Kefir & Beetroot, fermented over 7 days with coconut and homemade beetroot wine.
PENICILLIN’s commitment to sustainability extends to its food offering, using ingredients that follow the philosophy of “farm to fork”. All ingredients are sourced locally, including the chicken, seasonal fish from a farm in Yuen Long, and vegetables from Pat Heung Farm.
Appetizers include Romaine Hearts with Caesar dressing, quail egg, and anchovies, Salmon Gravlax Eggs Benedict with English muffin and Hollandaise sauce, Scottish Chicken Egg made the traditional way with minced chicken, soft-boiled egg, julienned potato and chorizo jam, and a weekly-changing Soup of the Day served with warm buttered brioche.
Choose one dish out of three main course options, which will also change weekly, including Alfredo Chicken Bun with chicken steak, baby spinach and truffle cream sauce, Pulled Pork Tortilla Wrap with cabbage slaw, three kinds of cheeses, and BBQ sauce, and Grilled Seasonal Fish with seasonal veg and champagne lemon cream sauce. Please note that service charge is not included in the lunch set price of HK$200.

BOTTLED COCKTAILS AT PENICILLIN
At PENICILLIN, delivery service is offered for large-batch 500ml bottled cocktails (HK$500 per bottle), which requires a minimum spend of HK$500 for pick-up, HK$1,000 for delivery within Central, HK$1,500 for delivery outside of Central but within Hong Kong island, and HK$2,000 for delivery to Kowloon.
Innovative 500ml bottled cocktails on offer include signature mixes such as the Alexander Fleming (ecoSPIRITS whisky, galangal-honey syrup, pom-beet shrub and mezcal), Something Clear (goat milk whisky, clarified citrus, ginger honey wine and smoky flame), Goose Negroni (wild gooseberry bitter, roselle vermouth and coconut NIP gin) and Modernist Science (bread vodka, fermented koji-pineapple and cheddar cheese liqueur).
