<<31st July 2019 – Hong Kong>> To celebrate this year’s Mid-Autumn Festival, Old Bailey’s Executive Chef Wong Kwan Man has prepared a series of delectable and authentic Shanghai-style mooncakes. A unique choice for the annual hallmark tradition of mooncake-gifting, the handmade Shanghainese mooncakes are available in limited quantities, in both sweet and savoury flavours.
Shanghai-style mooncakes (蘇式月餅) are characterised by their crisp and buttery short-crust pastry, which is in contrast to their glossy and chewy Cantonese-style counterparts. At Old Bailey, the mooncake pastry is created with a combination of flour, lard and maltose, resulting in the rich, crumbly texture of a traditional Shanghai-style mooncake.
For those who prefer a SAVOURY treat, Chef Wong has created a Shanghainese mooncake filled with ground pork, shallot, ginger, soy sauce, dark soy sauce and white pepper powder, making for a truly decadent bite to share with loved ones. Those with a SWEET tooth may opt for a traditional Shanghai-style mooncake filled with a smooth, creamy and sweet homemade red bean paste.
