<<18th March 2020 – Hong Kong>> MONO, the latest restaurant venture by award-winning hospitality firm JIA Group, has taken Hong Kong’s contemporary dining scene by storm. Since opening just over two months ago, MONO has received critical acclaim for its unique take on French cuisine by Chef-Founder Ricardo Chaneton. Ricardo, whose past culinary experiences include 3-Michelin-starred Mirazur and Petrus at Island Shangri-La, has been crowned Best Rising Star by South China Morning Post’s 100 Top Tables 2020.
Prior to co-founding MONO, Ricardo spent 7 years at 3-Michelin-starred Mirazur, the current no.1 restaurant from The World’s 50 Best Restaurants 2019, where he trained under visionary Chef Mauro Colagreco. His Head Chef duties comprised of leading daily kitchen operations and helming a team of 30 chefs, in addition to travelling extensively with Colagreco to bring a taste of Mirazur to the rest of the world. Ricardo was most recently the Executive Chef of Petrus at Island Shangri-La Hong Kong, where he spent 4 years leading an award-winning team from the young age of 28.
Now at the helm of MONO, Chef Ricardo combines his modern French training at 3-Michelin-starred kitchens around the world with his personal nuances, producing a single tasting menu centered on seasonal ingredients.
