<<27th August 2019 – Hong Kong>> – On the evening of 24th – 25th September, La Rambla presents an exclusive restaurant pop-up by celebrated Chef Miguel Ángel Mayor of Sucede in Valencia, Spain. Known for innovating Valencian cuisine through research of pre-Columbian culinary techniques, Chef Miguel’s brilliant intuition and gastronomic breakthroughs earned Sucede a Michelin star only a year after opening in the historic Caro Hotel. For this reason, dishes at Sucede are heavily influenced by and recover the gastronomic history of Valencia’s ancient Roman, Arabic and Christian civilizations.
For 2 nights only, guests of La Rambla will experience Chef Miguel’s award-winning modern Valencian menu at HK$1,600+10% per person, to be shared among a minimum of four guests. An optional wine pairing may be added for an additional HK$688+10% per person. The pop-up menu consists of Sucede’s seasonal signature dishes that move through Valencia’s various historical eras, often served as a spread of small bites inspired by the traditional Roman-style banquet. Guests will also discover Chef Miguel’s technique-heavy exploration of unique ingredients such as Spanish sea cucumber and cured beef tongue, offering creative twists and surprises at every course.

About Chef Miguel Ángel Mayor
Miguel Ángel Mayor trained at CETT Barcelona, but it was from exploring the most creative kitchens of Europe –La Broche, Mugaritz, Le Procope, Quique Dacosta, elBulli, Arola– that he broadened his culinary horizons. From his collaboration in the Research & Development (R&T) team of the elBulli foundation, he gained extensive knowledge of progressive techniques, seen in his contemporary Valencian cuisine at Sucede. Miguel leads the gastronomic market of Convent Carmen, the newly established cultural and gastronomic space in Valencia. He is currently working as the culinary director for his latest project, the restoration of Valencia’s historic palace La Serena and its surrounding garden.
