<<9th October 2020 – Hong Kong>> Located in the heart of Central, 1 Michelin starred Duddell’s Hong Kong serves authentic Cantonese cuisine within a beautiful art space. This October, Executive Chef Li Man-Lung unveils a menu featuring Shanghainese hairy crabs farmed in Hokkaido, Japan. The coveted hairy crab is a seasonal delicacy renowned for its sweet flesh and buttery roe, available now for a limited time at Duddell’s Hong Kong within a six-course tasting menu and special a la carte dish options.
Introducing New Hairy Crab A La Carte Dishes
This season, guests at Duddell’s will be able to savour delectable renditions of hairy crab by Chef Li. A total of 8 new Hairy Crab Dishes will be on offer including crowd-pleasers such as Xiaolongbao with Hairy Crab Roe (HK$78); classical hairy crab pairings such as Scrambled Eggs with Hairy Crab Leg Meat and Conpoy (HK$328) and Crispy Rice with Hairy Crab Roe (HK$128); and dishes that showcase Chef Li’s excellent technique, such as Steamed Grouper Roll with Hairy Crab Roe and Vegetable (HK$328) and Pan-fried Tiger Prawn stuffed with Hairy Crab Roe (HK$298).
Introducing a New 6-Course Hairy Crab Tasting Menu
For the ultimate hairy crab experience, opt for the chef’s six-course degustation menu priced at HK$1,288+10% per person. Comprised of select seasonal dishes, the menu surprises and delights with courses such as Double-boiled Black Goat Soup with Kanto Sea Cucumber and Steamed Whole Hokkaido Hairy Crab (225g), among others. Additional orders of steamed fresh Whole Hokkaido Hairy Crab is priced at +HK$488 per 225g, and may be requested upon ordering the hairy crab set menu. According to Chinese traditional beliefs, crab is considered part of the “cold” category of foods, and must be balanced with “hot” elements such as Chinese rice wine and ginger. Guests may opt for three pairing choices of yellow wine flights for an additional HK$588+10% per person.
