    <<12th DECEMBER, 2018, Wednesday – Hong Kong & Macau>>The 11thMICHELIN Guide Hong Kong Macaumade waves with announcements celebrating the culinary achievements of some of Hong Kong and Macau’s restaurants. Following the prestigious announcements on December 11, City of Dreams hosted a celebratory annual gala dinner for the third consecutive year with hundreds of glamorous gourmands, influencers and industry giants in attendance. Melco Resorts & Entertainment, the Official Title Partner of the MICHELIN Guide Hong Kong Macau, was proud to deliver a mind-bending seven-course gala dinner themed “Metamorphosis” and accompanied by a fine selection of some of Robert Parker-rated wines.

    Representing the shifting trends and landscapes in the ever-evolving culinary world, ‘Metamorphosis’ was an eclectic showcase of the unwavering spirit and creativity of modern chefs. Six acclaimed chefs from 2 and 3-Michelin-starred restaurants and the legendary pastry chef Pierre Hermé joined hands in a rare collaboration to craft a dining experience like no other.

    In addition to City of Dreams’ own superstar chefs, Kelvin Au Yeung Man Yin of Jade Dragon which just earned its third Michelin star in the 2019 Guide, Pierre Marty of Alain Ducasse at Morpheus which attained two stars also in the 2019 Guide in less than six months after opening, and Fabrice Vulin of two-Michelin-starred The Tasting Room, the event featured visiting culinary masters such as Masa Takayama (Masa, New York City; three Michelin stars), Chan Yan Tak (Lung King Heen, Hong Kong; three Michelin stars) and David Kinch (Manresa, San Francisco, USA; three Michelin stars). On this night, guests indulged in exclusive dishes such as Poached Gillardeau Oyster no.3 with Shellfish Tartare, Sea Water Jelly, Ginger Cream and Lemon Confit from Menton (The Tasting Room), Masa Toro Caviar (Masa), Fish Maw in Rabbitfish Soup with Crab Meat Roll (Jade Dragon), Cookpot of Blue Lobster, Potatoes and Black Truffle (Alain Ducasse at Morpheus), Steamed Sea Bass Fillet in Fermented Bean Sauce (Lung King Heen), and Charcoal Grilled Kagoshima Beef Ribeye and Charred Cabbage, Black Truffle with “Jus Corsé” (Manresa). The evening concluded with a sensationalTruffle dessert by Pierre Hermé.

    Guests also found themselves momentarily enthralled by the opening act of World of Dance 2017 finalist, Fabulous Sisters, who mesmerized the crowd with award-winning Japanese fusion dance moves.
