<<30th January 2020 – Hong Kong>> The latest restaurant concept by the award-winning team behind Beef & Liberty, EMMER PIZZERIA & CAFÉ opens its doors on Level 4 of Pacific Place in Admiralty, Hong Kong. The classy 110-seater space features an iconic rotating steel pizza oven, a deli counter stocked full of freshly-made salads, signature Emmer bread panini and pastries, and has alfresco seating options for an invigorated dining experience. Under the helm of Executive Chef and master pizzaiola Karla Mendoza, Emmer Pizzeria & Café serves up a truly spectacular pizza pie: 11 inches of crisp-yet-chewy dough, baked to perfect golden brown.
Introducing Emmer Pizzeria & Café – The Concept
“Emmer” takes its name from an ancient, organic heritage grain eaten by hunter-gatherers for thousands of years before it was first cultivated in the Near East. At Emmer Pizzeria, the same whole grain is hand-milled to preserve the antioxidants and nutrients in the kernels and blended with rye and meticulously-sourced Italian flour. The flour is mixed with water and natural yeast and then left to ferment and rise over two days, allowing the dough to develop complex air bubbles and texture before being baked in the iconic rotating steel oven. The resulting 11-inch, 6-piece pizza is the perfect blend of chewy and crispy; light inside, with just the right bite of crunch from the crust.
Apart from its signature pizzas, Emmer Pizzeria & Café offers an all-day dining experience that includes a selection of breakfast items such as Emmer bread panini – rolled and baked from the same emmer pizza dough – house-baked pastries and cakes and locally roasted coffee from Holistic HK. Lunch options include Emmer’s signature 11” pizzas, a weekly rotating menu of 6 fresh, seasonal vegetarian and vegan salads, 5 daily Emmer bread panini, a signature lasagna, vegan, vegetarian soup and up to 2-3 types of daily blackboard specials. For those unable to leave their desks, Emmer is now available for takeaway and delivery via Deliveroo.
At Emmer, Hong Kong’s best new Happy Hour runs from 4-7pm on weekdays only, with an irresistible offer of only HK$38 for draft beers, wines by the glass and house cocktails.
Introducing Executive Chef & Master Pizzaiolo, Karla Mendoza
Filipino-native chef and global culinary consultant Karla Mendoza rose to culinary fame with her mastery of pizza – from artisanal recipe development to the management of successful pizzeria systems around the world. With her most recent experience as the Executive Chef of Pizzeria Mozza in both Los Angeles and Singapore, Karla has demonstrated the ability to rise above in a highly competitive landscape. Her impressive chef stints span some of the most respected restaurants globally, from The Dining Room at Ritz-Carlton in California, and Mirezi and Eleven Madison Park in New York, to finally landing back home in Manila, Philippines as a top tier culinary consultant. In 2019, Karla was recruited for the position of Executive Chef at Emmer Pizzeria & Café, the latest restaurant concept by GCRC Hospitality Group in Hong Kong.

Our name is our beginning: Emmer is an ancient, organic heritage grain, which we blend with rye and good Italian flour. These hand-selected grains are lower in gluten, and higher in nutrients like antioxidants, vitamins and minerals. We don’t use them because they sound good, or just because they are good for us, we choose them because they make every pizza naturally better, and naturally tastier. taste is at the heart of everything we do – and we take things slow to get the taste right, milling our grains by hand, then letting the dough ferment over two days to let it rise to something naturally light and naturally airy.
