<<4th January, 2019 – Hong Kong>> A cocktail haven tucked away in the basement of The Landmark, an experience at Dr. Fern’s Gin Parlour isn’t your average doctor’s visit. An appointment with Dr. Robben Fern is sure to cure any malady, as the rather untraditional prescriptions range from fabulous renditions of the classic Gin & Tonic to curated bar bites. Starting this month until February 2019, patients will be able to indulge in Dr. Fern’s brand-new seasonal Winter Afternoon Tea packed with nostalgic seasonal flavours, alongside a range of the clinic’s very first immunity-boosting Vegetable Gin Cocktails.
Dr. Fern’s Afternoon Tea: The Winter Edition
Inspired by his favourite novel from when he was a child, A Christmas Carol by Charles Dickens, Dr. Fern has styled a new afternoon tea set after the kindness, generosity and compassion that embodies the spirit of the merry season. Heartwarming prescriptions include his old-time family recipes for Ginger Bread Cake, Cannoli with Rum Raisin and Red Wine Poached Apple. Savoury treats include Butter Pulled Pork with Ricotta, Sweet Potato with Mung Beans, and Potato Skin with Crab Meat, among others to tide us over the winter months.

By Doctor’s Orders: Dr. Fern’s Health-Boosting Vegetable Gin Cocktails
Believed by Dr. Fern to cure any ailment or stress-related palpitations, gin is the purest distillation of herbs and botanicals. In an extra step to boost health immunity during the cold winter months, Dr. Fern has prepared a series of his first ever Vegetable Gin Cocktails to treat pesky ailments this winter. Each delicious cocktail has been carefully concocted with local botanicals and vegetables foraged from local farms, chosen and combined with the ingredients’ various health properties in mind.
Veggie cocktails include the Cucumber Sling (HK$170), a mixture of Fragrant Harbour Gin, Chartreuse Gentian, Cucumber Juice, Ginger Syrup, Fresh Coriander, Lemon Juice, Celery Bitters & Tonic. Through the strength of the cucumber’s potassium and magnesium, guests will surely be able to relax their mind, body and soul with a sip. Taproots (HK$140) is a concoction of Beefeater Gin, Lillet Blanc, Orange Bitters, Orange Juice, Carrot Juice and Simple Syrup, high in nourishing vitamin K and potassium agents from the carrot.
As the weather begins to fluctuate, the Kale Sour (HK$140) is the perfect remedy for battling colds, feeding patients with vitamin C & K from the kale to boost immunity and lower cholesterol. Feeling low and lethargic? Maize Collins (HK$150) is the answer; created with Farmers Gin, Homemade Corn Cordial, Blood Orange Purée, Lemon Juice, Baby Corn and Yuzu Tonic. Chock full of minerals and antioxidants, the blend of ingredients assists in energizing lymph nodes and kicking off metabolism.
The Onion Gimlet (HK$140), a unique combination of Hayman’s Infused Onion Gin, Onion Honey Cordial, Lemon Juice and Onion Pearl, is the go-to drink for coughs or sinus-related ailments. Finally, every fine botanical ingredient in the Rhubarb Daiquiri (HK$170), made with Barr Hill Gin, Rhubarb & Rose Cordial, Lemon Juice, Aquafava and Edible Flower, will assist in making the overall body health stronger, boost immunity and prevent infections.
