“To the bracing acidity, concision and aromatic purity expected of the 2008 vintage, Dom Pérignon adds depth, density and complexity.”
Richard Geoffroy, Chef de Cave & Creator of Dom Pérignon Vintages
<<February 18th, 2019 – Hong Kong & Macau>> Embodying a classic yet unexpected expression of champagne through the prism of Dom Pérignon, Dom Pérignon Vintage 2008 is now unveiled for the first time in Macau, starting at the iconic setting of Alain Ducasse at Morpheus in City of Dreams, Macau. On February 15, invited VIP and media guests were the first in Macau to experience the remarkable 2008 vintage through two-Michelin-starred gastronomic pairings.
Only three months after the launch of Dom Pérignon Vintage 2008 in Hong Kong, the new iconic vintage has finally arrived in Macau only at Alain Ducasse at Morpheus, City of Dreams. City of Dreams is the only resort in the world to house a dedicated Ducasse Restaurant dining floor, which features a fine-dining restaurant Alain Ducasse at Morpheus, a French bistro Voyages by Alain Ducasse and also a bar. The resort’s ultra-luxurious Morpheus hotel has been named one of the ‘World’s Greatest Places 2018’ by Time Magazine just two months after its opening.
Following the distinguished collaboration between Dom Pérignon and legendary chef Alain Ducasse around the launch of Dom Pérignon P2 Vintage 2000, the arrival of Dom Pérignon Vintage 2008 in Macau marks the beginning of a renewed creative partnership with the chef this year. From its origins, Dom Pérignon, created in a spiritual environment for the tables of kings, has held a dual allegiance to the sacred silence of its cellars and the elaborate rituals of sophisticated dining. These twin spheres of creation and discovery form a close and exceptional partnership that is a potent source of creative genius.
Dom Pérignon Vintage 2008
The singularity of Dom Pérignon Vintage 2008 brilliantly completes the line of Dom Pérignon vintages before it. Dom Pérignon vintages set their own release dates, and Vintage 2008 required more patience than Dom Pérignon Vintage 2009, which was presented earlier – an unprecedented event in Dom Pérignon’s history.
While 2008 was a year dominated by grey and overcast skies, September was the miracle month that saved the vintage with perfect blue skies and prolonged north-northeasterly winds. The grapes were riper than anyone dared hope, and gave way to a consummate balance that is the enduring signature of Dom Pérignon.
On the nose, Dom Pérignon Vintage 2008 elicits a complex and luminous bouquet of mingling white flowers, citrus and stone fruit. The overall effect is enhanced by the freshness of aniseed and crushed mint. The final aromas are an earthy blend of spicy, woody and roasted notes.
On the palate, the wine slowly opens up to reveal a complete balance with the nose. Its slender, minimalist, pure, toned, athletic character is now also expressed with warmth. The fruit is pronounced and clear, and its persistence is mainly aromatic, grey, smoky and highly promising.
Dom Pérignon Vintage 2008’s Ingredients Inspiration
Dom Pérignon Vintage 2008 enjoys duality: warmth and freshness, meat and iodine pairings, cooked and raw. Spices enhance and accentuate the vintage’s effervescence and densify the wine. Paired with exceptional food ingredients, Dom PérignonVintage 2008 will blossom on the palate and reveal its vibrant minerality and coherence. Famously hard to pair vegetables such as green asparagus, raw broad beans, rocket and avocado match the crisp and aromatic elements of Dom Pérignon Vintage 2008, perhaps with a touch of fruity Sicilian olive oil.
Fruit ingredients that pronounce the sweetness of Dom Pérignon Vintage 2008 include pear, pineapple, nectarine, pomegranate, apricot and physalis, and non-fruit ingredients include barley sugar, honey-boiled sweets, molasses and rum, licorice, candied papaya or pineapple, and honey or pollen. Mineral and saline flavors are enhanced with ingredients such as the succulent glasswort, umami-rich seaweed, Japanese eel and whelk, and aromas of buttercup, jasmine, gardenia, orange & dried orange blossoms round out the Dom Pérignon Vintage 2008 experience.
Introduction of Alain Ducasse at Morpheus
Paying homage to the great traditions and savoir-faire of French gastronomy, Alain Ducasse at Morpheus attained two stars in the MICHELIN Guide Hong Kong Macau 2019 in less than six months since opening, and redefines fine dining with a contemporary vision. It is a place where taste is the restaurant’s raison d’être and the ultimate criteria of success. Alongside French bistro Voyages by Alain Ducasse, and a bar, the restaurant serves as one of the few places in the world to possess an unparalleled presence from the legendary chef. The restaurant is located in Morpheus, the newest hotel and ultra-luxurious destination at City of Dreams, developed by Melco Resorts & Entertainment.
Headed by Chef Pierre Marty who prides himself on a sentimental approach to cooking, the restaurant’s menu has been created by both Marty and Ducasse to ensure that the authenticity and exacting flavors of French cuisine shine through. Precision in taste is crucial to the restaurant’s culinary philosophy, as great classics are revised and re-interpreted with innovative cooking techniques and presentation.
Discipline and distillation are also keys to the philosophy of Alain Ducasse at Morpheus. The restaurant offers a cuisine that balances lightness with savory flavors, offering dishes that celebrate the bold and concentrated flavors of jus and broths. Eschewing superfluous gimmickry, every element of the food, from preparation to presentation, is driven by a strong sense of purpose.

About Dom Pérignon: Power of Creation
Dom Pérignon’s creation is centered upon its absolute dedication to vintage wines. Each Vintage wine is created from the best grapes grown in one single year – a true challenge for a unique interpretation of the seasons, and for reinvention. The uniqueness of Dom Pérignon vintages lies in the way they evolve – not steadily and in a linear way but through successive windows of expression that are called “Plénitudes”. Reaching new heights and revealing the spirit of Dom Pérignon even more distinctly, it is only at these times that the wine is worthy of a new release.
From one Plénitude to the next, the power of creation is inscribed into the memory of the wine. On January 1, 2019 Vincent Chaperon became the new Dom Pérignon Chef de Cave. He succeeds Richard Geoffroy, Creator of Dom Perignon Vintages for 28 years, with whom he has been working closely since 2005. This transmission is a compelling milestone in the history of Dom Pérignon, embodying a living heritage.
