Catch Chef Simon Rogan in action as he unveils new seasonal menus at Aulis Development Kitchen & Roganic Hong Kong

    <<22nd May 2019 – Hong Kong>> Aulis, the first international outpost of Michelin 2-star L’Enclume’s 12-seater chef’s table, welcomes founder and chef Simon Rogan back to the Hong Kong kitchen. For one week between 4-10 June, catch Rogan in action at both Aulis and farm-to-table restaurant restaurant Roganic, his second successful venture in Hong Kong and more affordable sister venue of Aulis. Arriving just in time to unveil new seasonal menus at both restaurants, Simon Rogan introduces fresh and innovative flavours on the various summer tasting menus.

    This season, some of the new dishes exclusively on Aulis’ menu include a sumptuous Mushroom Wholemeal homemade bread with miso glaze, an emulsion of fresh Hong Kong Pea, Fermented Watermelon, Beetroot with smoked eel, and dessert of Earl Grey, Chocolate and Cherry Cake. Newly available on both Aulis and Roganic tasting menus include seasonal specials such as Oyster with cauliflower and pike perch roe, and a dessert of Tunworth Cheese with cranberry and hazelnut.

    Some signature favourites remain, including the Grilled Salad, which uses a variety of in-season vegetables from local farms in the New Territories grilled over cherry-wood embers, resulting in a beautifully charred and smoky flavour. The pairing libation is Japanese sake from Tsuki no Katsura, one of the oldest sake breweries in the Fushimi area of Kyoto. Another longstanding Simon Rogan dish is Five-Flavour Cod Fish, created from a codfish flash-steamed for a minute and a half, then blowtorched. The cod sits on a bed of black garlic purée, with a sauce made with seaweed, the bones of the codfish, and an infusion of spices including vanilla, licorice, orange, lime and mint (the five flavours).

    Aulis & Roganic Hong Kong Menus

    At Aulis, the 10-course creative chef’s table menu (with up to 15 course servings) offers guests the opportunity to immerse themselves in Rogan’s unique culinary vision first-hand, and is priced atHK$1,480 per guest, with an additional HK$680 for the wine pairing experience. There is also an option for a juice & tea pairing, priced at an additional HK$380.

    At Roganic, indulge in the 10-course Roganic Full Tasting Menu (HK$980) for the full Roganic experience, or the 8-course Roganic Short Tasting Menu (HK$680), both with the option of wine pairings at an additional HK$580 or juice & tea pairing at an extra HK$280. The Roganic 333 (HK$280) lunch menu highlights an appetiser and three courses of signature dishes, offering a glimpse into the world of Simon Rogan with the power of three.

    Aulis Hong Kong is Simon’s first overseas stand-alone dining destination in Asia with just 12 seats, acting as the creative hub for his Hong Kong team of chefs and offering diners the opportunity to immerse themselves in Rogan’s culinary vision first hand and be challenged to taste original and innovative dishes.
