    <<12th November 2020 – Hong Kong>> Opened in collaboration with Chef Marco Sacco who holds a total of 2 Michelin Stars in Italy, CASTELLANA HONG KONG sources its produce directly from Italy’s resource-rich Piedmont region to reproduce traditional cuisine with a modern twist. Together with the expertise of celebrated Chef Marco, Castellana goes further to combine authentic Piedmont cuisine with some of the best ingredients around the world to surprise and delight guests with an exquisite new gastronomic experience.

    This holiday season, Castellana Hong Kong presents a 4 & 7 Course Festive Menu available between 7th December 2020 – 6th January 2021, in addition to a 7-Course New Year’s Eve Menu available on 31st December 2020 only. With the festive season coinciding perfectly with the season of white truffles, the menus may be enhanced further with aromatic shavings of Alba truffles.

    The Festive Menu starts at HK$1,280 for four courses (HK$1,880 with wine pairing) and HK$1,580 for seven courses (HK$2,280 with wine pairing). Highlights of the seasonal menu include Uovo di Montagna organic mountain egg, Risotto al Castelmagno Carnaroli rice risotto with Castelmagno cheese, and

    Filetto di Cervo deer tenderloin and cream brioche, a taste of one of the season’s finest game. The festive menu finishes with Gelato al Tartufo Bianco white truffle ice cream, infused with fresh Alba white truffle.

    The New Year’s Eve Menu features seven courses for HK$1,580 (HK$2,380 with wine pairing), and this highly special menu will require the whole table to pre-order. Ring in the New Year with the chef’s modern interpretations of traditional Piedmontese cuisine, such as Langostine e Nero di Seppia langoustine royale with squid ink, Carbonara “Au Koque” signature homemade tagliolini with ‘au koque’ carbonara sauce topped with crispy ham, Merluzzo Artico Norvegese e Carciofi Norwegian toothfish with artichokes, Animelle e Crema di Balsamico Piccante veal sweetbread with Balsamico spice. Finish the meal with Cremino, Biscotto e Tartufo or seasonal white truffle biscuit.
