In a bid to support local champions, Michelin Green Star recipient Roganic Hong Kong introduces a new menu paired with craft beers by local independent brewery, Yardley Brothers

<<8th June 2021 – Hong Kong>> Simon Rogan’s one-MICHELIN-starred and the only MICHELIN Green Star recipient, Roganic Hong Kong continues its mission of preserving the local community by supporting homegrown food & beverage brands – a fun and innovative way to reduce environmental impact while collaborating with local champions.
On Friday, 25th June 2021, Roganic Hong Kong will partner with Yardley Brothers, a local craft brewery from Kwai Hing, to present a beer pairing tasting menu available for one night only. Priced at HK$1,480+10% per guest, the collaborative menu features pairings between Head Chef Ashley Salmon’s seasonal farm-to-table dishes with Yardley Brothers’ signature and limited-edition craft beer releases.
For the light and refreshing starters that comprise of small bites such as citrus-cured salmon, chickpea wafer with broad beans, truffle pudding, and mackerel tartare, the first beer pairing of choice is Yardley Brothers’ Mum’s Rhubarb Crumble Pastry Sour, which has a sweet, sour and cinnamon-biscuity flavor profile. The balanced acidity and tartness help to get the appetite rolling, and is served immediately upon guests’ arrival. The second pairing, Thai Chilli Getaway with its slight vegetal green nuances from basil, is the perfect match for Roganic’s marjoram brined cabbage and soy miso glazed shimeji.
The next dish is a fresh pea with salted egg and hazelnut, paired with Hornindal Farmhouse Pale Ale for its herbaceous nose that adds depth to the pea, and its delightful citrus finish. Sea bream is a fleshy and flaky textured fish, and the poached bream with asparagus and lovage is served alongside the Bugs II: Gamay Noir à Jus Blanc Barrel-Aged Sour, which has a mildly creamy mid-palate and hints of honeysuckle. Sip, eat, then sip again, and observe how the beer clears up the palate nicely.
Roganic’s local Wah Kee pork dish is delicate with subtle fatty hints, which pairs phenomenally with the equally delicate and delicious Frederiskdal French Oak Barrel Aged Cherry Sour. Fruit-forward yet not over-powering, French oak adds body to beer along with some soft tannins. The final dessert of whipped woodruff yogurt with blondie fudge and cherry is sipped with the balancing Lychee Raspberry Sour, a sour and fruity beer that is more refreshing than sweet.

About Roganic Hong Kong:
Roganic first opened in 2011 in Marylebone as a two-year pop-up, a sister restaurant to L’Enclume. Five years later, Roganic returned to London, bringing elements of L’Enclume, Simon Rogan’s two Michelin star restaurant in the Lake District. The team is comprised of the original Roganic line up, amongst other past and present employees of UMBEL Restaurant Group.
