New Tasting Menu Dishes at Roganic Hong Kong

To celebrate the return of dinner service, Roganic Hong Kong presents six new dishes that showcase the season’s finest ingredients, sourced locally where possible. Buttermilk Waffle, Whipped Parfait, Cranberry & Hazelnut is a refreshing appetiser of buttermilk waffle served with whipped goose liver parfait, preserved cranberry gel, and grated hazelnut. Potato Terrine, Smoked Eel, Mussel & Dill is a mouth-watering combination of caramelised potato terrine, smoked eel, dill emulsion and smoked eel cream. The dish is finished with mussel sauce split with dill oil. Available only on the short and long tasting menus, the Maitake Mushroom, Truffle Custard & Miso Glaze is a sumptuous course of Japanese maitake compressed in soy pickle, barbequed, then dressed in a miso glaze. This is served with truffle custard and truffle puree, and finished with a chestnut mushroom foam.

Salmon, Broccolini, Parsley & Roasted Walnut features buttery Scottish salmon roasted and rested in brown butter, then placed on a bed of New Age Organic Farm long beans dressed in kale vinaigrette. The famous Chinese “Three Yellow Chicken”, named for its yellow feet, skin, and beak, headlines the newest poultry dish of Three Yellow Chicken, Sweetcorn, Garlic & Chilli. Yellow chicken breast and confit leg are served with a local sweetcorn puree, chicken skin, homemade garlic and chilli oil, and elderflower chicken dressing.

For dessert, Roganic Hong Kong presents the sweet addition of Bee Pollen, Chamomile & Hay, a unique creation featuring bee pollen and chamomile cake soaked in gin, dusted with chervil powder, and served on strawberry jam and fresh milk ice cream.

The new dishes are now available throughout Roganic’s three tasting menus, and all new items have been marked below with *:
