• Chef Spotlight: Jose Antonio Navarro Cotes

    As the new Head Chef of one of our favorite tapas restaurants in town, it was a given that Chef Cotes would bring with him a list of impressive credentials. Having worked in some of the finest kitchens throughout his home country and served under numerous star studded chefs, his resume is filled with prestigious positions and honors. Of course, it is ultimately a chef’s cooking that speaks volumes, and Cotes’ knowledge for his native cuisine is evident in every dish he does. With the Spanish grilling and smoking techniques he inherited from Amador Etxebarri, we look forward to see some delicious new signatures on La Paloma’s menu soon.
