• Chef Ricardo Chaneton and JIA Group to open MONO this December

    Chef Ricardo Chaneton, formerly Head Chef of 3-Michelin-Starred and World’s #1 restaurant voted by World’s 50 Best Restaurants 2019 Mirazur, is set to open his first restaurant MONO in Hong Kong together with JIA Group, the Hong Kong-based hospitality firm that operates 14 restaurants in Hong Kong founded by Yenn Wong. MONO will open its doors on On Lan Street, Central, introducing a new take on contemporary French cuisine by South American-born Chef Ricardo, who has worked and trained extensively in French cuisine throughout this career. Most recently, he was the Executive Chef of Petrus at Island Shangri-La Hong Kong, where he spent 4 years leading an award-winning team.

     

    At MONO, Chef Ricardo will combine his classical French training at 3-Michelin-starred kitchens around the world with his love for pure ingredients. Best known for his Head Chef stint at 3-Michelin-starred Mirazur, the current no.1 restaurant from The World’s 50 Best Restaurants 2019, Ricardo spent 7 years training under celebrated chef-owner Mauro Colagreco. His duties as Head Chef comprised of leading day-to-day operations in the kitchen, as well as traveling extensively with Chef Mauro for inspiration, bringing a taste of Mirazur to the rest of the world. In addition, Ricardo had also completed a year-long apprenticeship at 3-Michelin-starred Quique Dacosta in Denia, Spain prior to joining Mirazur.
