• Castellana introduces two seasonal menus in celebration of the authentic regional Italian cuisine of Piedmont

    Marco Sacco’s Journey Around the World (from HK$1,080 for 4-courses, HK$1,280 for 7-courses) features Capesante e millefoglie di rapa bianca, pan-seared Hokkaido scallops with a terrine of white turnip with milk and citrus sauce; Gnocchi con gamberi e agretti, home-made gnocchi pasta with sea prawns and sea asparagus; Zuppa di cipolle, onion soup made from a combinations of burnt white and coppery-sweet onion from Montoro a small town in Campania region; and Bianco di Faraona e salsiccia, slow cooked guinea fowl supreme stuffed with sausage, spinach and milk-infused bread.

    Castellana Tour of Italy (from HK$880 for 4-courses, HK$1,080 for 7-courses) brings a collection of dishes that made Chef Marco Sacco a culinary hero in Italy and beyond. The menu includes seasonal delights such as Sandwich di sarde, a pan-fried loaf filled with Adriatic Sea sardines and anchovy cream served with raspberry vinegar gel; Raviolo Torino, homemade ravioli filled with braised veal and pork in  savoury butter sage sauce; Razza e Mascarpone, skate wings steamed and then pan-seared, served with its own jus blended with Mascarpone cheese, smoked trout eggs and seasonal vegetables; and Barbabietola, beetroot ice cream with ricotta, raspberry sauce and beet chips.

    Both menus offer wine paired options that are selected from Castellana’s vast and specially curated wine menu. The pairing option offers Italian labels such as Mirafiore Blanc de Noir Alta Langa, Orlando Abrigo Dolcetto d’Alba 2015, Marchesi di Barolo Moscato D’Asti 2018, and more.
